Yes, the service is hit-or-miss.  I can't remember how many times that we've been, but I'm thinking three times...maybe four.  Only once was the service exemplary.  One time (the first visit, shortly after they opened), it was a train wreck.  But I suspect that it will improve with time.  Our last visit was just fine.

An expansive menu.  Stuff that I've not seen elsewhere.  Stuff that I'd probably never order, but I'd try, if I was offered a taste.  If you go with a combo plate, you'll conclude that this place is mediocre pseudo-Mexican.  I've done that and that food is mediocre and typical.  I mean, a ground beef burrito is either okay or it isn't...there's scant middle ground for complaints.

Instead, try something different.  The fish tacos are kick ass.  The steak nachos are a hit.  Whatever you do, don't leave without getting a side of charro beans.  Good for your heart, from what I've heard for 40+ years.  Srsly, they are amazing.  My lady offered me a taste from her (small side) bowl, and I damned near commandeered the remainder.  Get some and try them.

The margaritas are tasty.  But, again, we have a binary path here.  Don't expect unicorns to pop out of the walls and dance for you if you order one.  Order a dozen, drink them, and maybe the time-space continuum will hack up something like that.

A solid four stars, even with the imprecise and unpredictable quality of service.  Oh, ask for some hot salsa...they don't automagically bring it out, but they have some that is pretty snappy.  Go...

Rojo means Red. Lots of rojo fun decor. There is a bar area, indoor seating, and a small patio outdoor seating. As we entered, there was no hostess for about a minute. She never asked if we wanted inside or outside, she automatically took us to a seat. We requested outside and she took as there. She never gave us me us menus, so I walked back inside and took them off of the hostess booth. Once seated, we didn't have a server for a little while. Finally someone brought us chips and salsa. Their salsa is very good and the chips are light and crispy. We placed our order. Water and beer arrived on time. The Vegetarian combo was a nicely plated dish full of food. The shredded beef chimichunga was a little salty, but a generous portion. Another guest at the table had requested the house hot sauce and we had to request it a second time after the food was delivered. No one checked on us to see if the meal was alright. We had to ask another server to locate our server. We placed an order for fish tacos to go. When we got home, there was only one. We asked for tacos (plural). That should have been confirmed by the server that we wanted the 3 instead of one. The person at home was disappointed. We have eaten here before and had better service. This time was less...

Had come before and enjoyed it didn’t blow me away but decent family atmosphere but just got home from a very disappointing dinner. Service was incredibly slow but thought she was likely new so gave the benefit of the doubt. Food was mediocre and came out spaced out and then after waiting an excessive amount of time to finally get all three meals, had to ask for every little thing that should be obvious (kids are splitting this pick 3 adult dinner so need more plates , waters & salsa were empty for 20 minutes may we have more, none of the empty/used items were cleared at the seldom visits...).
