Mr Gatti's Pizza — Restaurant in San Marcos

Don't mind crystal d's review having worked in the pizza industry for as long as I have pizza sauce doesn't have enough time to "ferment" no matter what chain you use that and cheese almost always get used the same day if not you can bet it will the second day. Gattis pizza is a local favorite and out of most chain restaurants they are either the only one or one of the few that actually makes fresh dough in store. The ingredients are always fresh if not they will shop locally to fill any ingredient voids. That being said if there is an unusual ingredient that rarely gets used they are labeled for freshness and if past a certain date will be thrown out even though they could still be considered fresh. My bet is she, seeing this is a college town, could have been a late night out with friends or whatever the reason. But I do know from experience this accusation is kinda funny. Same thing when someone orders wings from pizza hut, when I worked their a couple years ago they only have a walk in no freezer so it's scientifically impossible for the wings to be frozen after they are fried. This is why you shouldn't franchise, you lose your standardization and quality control.

This location served over proofed dough that tastes like alcohol! It means they are using week old dough to save money!

The rolls we got were also DRIPPING in GREASE!

They also don't mention this is a franchise location and you can't get the standard menu either. Thinking you want a 12 piece pizza rolls for $9.99? Think again!

The same 12 rolls here will cost you $18! ALMOST DOUBLE!

Coupled with rude and unaccountable staff. This location is destined to fail.

I would rather drive 40 minutes to Austin so I can get Standard Gattis than ever order...

The first (and last) time I tried to order was at 10pm this evening. I order the ranch lovers coupon meal - Large 2 topping pizza and a medium cheese stick with ranch for 15.99 along with an 8 piece wing. 5 min after ordering I get a call from the store from the store that they are out of medium pans and wings so i will only be able to get the pizza and the ranch. The worker said the pizza would be 14 something and then there was gana be a charge for the ranch. That's the most ridiculous thing I have heard. I shouldn't miss out on a coupon just because the store lacks the supplies/ingredients. Hopefully...
