BAR SCENE REVIEW. Most underrated SEATAC bar, definitely worth the trip, or if you are a Hilton guest its unnecessary to go wandering around looking for a cool spot (like I did for years). Cozy atmosphere, good bar bites, burgers, select dinner items, nothing fancy pants though or you will be disappointed. Sandra the bartender (sorry I may have forgotten her name, she is from Columbia, you will know…) is amazing, one of the nicest people you will meet and offers great service, is highly attentive and good company.
Breakfast has always been iffy – difficult service. Food, meh. Listen, folks up that early in the morning are heading to the airport to catch a flight! You may sit there 5-10 minutes before you see a server so bake that into your travel time to the terminal.
The main dining room/dinner menu, I am not a fan – the kitchen does not put out consistently good food, I fear they know generally, hotel guests are a captive audience so my guess is the restaurant manager is not on top of things. I did some research online about Spencer’s for Steak and Chops and was thoroughly confused. I thought it was a chain but could not locate one sole website with all of their locations, only independent franchises popped up. I have been to several around the country that are MUCH better; Salt Lake City for instance is a significant step UP from Seattle. If Hilton manages this one, the GM needs to step in, if Spencer’s is leasing the space, well, the owner should be more involved.
In any case, for dinner and a game at the bar, try a Burger, NY Steak, Fillet, Rib Eye, or Roasted Chicken. I tried one of the Pappardelle dishes once it was very good. The Farmer’s, Caesar, and Wedge salads are all very good. For appetizers go with the Crab Cake, or try the Buffalo Chicken Wings which are excellent, they will prepare them extra crispy if you ask. I hate undercooked slippery wings! 4 stars, bordering on 3, but the bar service was an add-on. Good bar vibe, friendly company, they aways have a game on.

At number of the hotels have good mid-range breakfasts and free parking. Decided to try the Hilton. Parking is way in the back under the conference center. Long walk to Spencer's. Buffet only. At 30 bucks, it seemed barely as inspiring as of the comes-with-breakfast mid-range chains. Scant service; had to walk around to find someone and gave up. Finally found some cream for our mini-mart quality coffee. No one told us if we were to pay up front or wait (indefinitely) for the wait staff. Finally had to ask the hostess. Then, we had the indignity of having to pay a small fortune for parking. 3x the hourly rate of the SeaTac airport parking across the highway. Stop resting on your laurels and Hilton name. And stop the sneakflation. The halibut I had was some of the very best halibut I've had, and I once lived in Anchorage, so I've had halibut. However, it wasn't prepared very well, sort of dredged in a dry coating, not a crumb.
They also don't serve hot bread, at all. For a restaurant that charges upwards of $60 and more for ala carte entrees, cold bread is a huge mismatch.
Finally, I was preparing to order dessert when the busboy promised to bring more iced tea. I asked him to check it because mine had been fermented. So, then the manager came over, and instead of going to check the tea, simply told me I was wrong and that their tea was made fresh daily. You know and I know that restaurants do indeed mix new tea with old, as well as leave them out all day in hot kitchens. It was fermented. That put me off dessert.
