Went here opening day -- unplanned, but I knew it was coming -- got some limited edition magnets too! Met the owner and his friend Andy. Nice people. This is Seattle's first location but they're international (actually funnily enough saw one back in Tokyo in August 2025 but didn't go in), and this is my first time trying it, so can't compare it to the other locations. Like Anthony Bourdain of which it is rumored inspired the name when he uttered "I'm an eggslut", I too love many combinations of egg dishes. Fortunately it doesn't disappoint. I got the Bacon, Egg, and Cheese. They use a special type of egg, and combine it with a uniquely blended siracha ketchup. The brioche bun has good bite and the eggs well cooked -- damn well better be when all you do is eggs haha -- and the cheese and everything is solid, BUT the flavor disappears as fast as it arrives. It needs a bit more savory lasting bite. It's good and all the ingredients work and compliment each other, but it's not the greatest egg sandwich I've eaten in Seattle. But it is tasty and I would eat it again.
I also got the Vanilla Cream Cold Brew, the cream was good but the coffee itself left a bit of an aftertaste. With the Roastery being next door, if you can stomach the lines, may be a better coffee option.
Inside its bare bones. It has I imagine the signature decor of the Eggslut motif while still maintaining the Melrose Market charm. Not a lot of seating, but this isn't a place people will be having long dinners so you should be fine on the wait. The staff was quite friendly especially given it's opening day and hectic. Good customer service.
For the Egg Sandwich I'll give it an 8/10. Flavor is muted for what you're paying for but it gets bonus because it uses ubiquity in its ingredients and composition and it's all synergistic. Not easy to pull off.
The Coffee gets a 6/10. If you need a quick pick me up it's fine, but there's plenty better elsewhere.
EDIT 09/08/2025: I returned to try the Fairfax. I got it with their chicken sausage. I love me some scrambled eggs and the sauce with the chives in these had lasting flavor but it was a bit too salty. Chicken sausage was overpowering in flavor (and $3 extra doesn't justify it either), but it is a good chunk of protein if you opt for it with the eggs. However, the Bacon, Egg, and Cheese I think is overall better and if you're having trouble deciding I'd go for that one. I give this item a 6/10.
EDIT 09/12/2025: I tried the burger (single) with egg. I was very hungry that day because I had gone to the gym and been running on nothing but coffee and needed protein. Well it delivers in that area, but as far as taste. There's nothing extensive to say about it. The pickles are fine. The egg is good and messy and helps break up what would otherwise be a dry hamburger. Hamburger was average flavor. The brioche bun was really good though. At the time I probably feel it's a 7 but it's nothing too special however it's not a 6. So I rarely do decimals but will give it a 6.5. If you need protein this will serve the role and add the bacon like I did for even more. Make sure you exercise that day to justify this calorie bomb...

Couldn’t resist going back today—had to get my all-time fave, the SLUT (still undefeated 🥚✨) and tried the vegetarian hash browns too. Both were absolutely delicious! Crispy, cozy, and sooo satisfying.
The Fairfax is still on my “must-retry” list for next time. But for now, these two get my top recommendation! 🥄💛

Opening day review :
I first discovered this place a few years ago in Vegas, and it instantly became one of my favorite spots whenever I visit. So, I was really excited when I saw they were opening in Seattle!
I went on opening day yesterday and ordered the Fairfax sandwich. It was delicious--the bread was perfectly buttery. That said, I felt it was missing a little of the bold flavor I remembered from the Vegas location, maybe because of the sriracha mayo (it seemed lighter here, or maybe just less of it).

Read moreI first tried Eggslut in Tokyo without realizing it was a chain. Fast forward a couple months, and I find out that it was coming right to my neighborhood in Seattle. Needless to say, I was in line for opening day!
The bacon egg & cheese is one of the best breakfast sandwiches in the city, and the price is actually fair compared to similar sandwiches ($12.25 vs $15+ elsewhere). The hashbrowns were solid and the cold brew was actually better than expected. I'm excited to try the rest of the menu.
The only negatives are 1) lack of seating - which is mostly just due to the nature of the location. Expect to take your food to go and find somewhere nearby to sit. And 2) unfortunately, the popularity. I tried going back a second time during opening weekend and the line was an estimated 2 hours. I'm really hoping the hype dies down so this can become more of a regular spot for me, but with social media influencers etc. I may just need to avoid weekends...
