As the weather gets colder, I’ve been on a mission to find the perfect bowl of ramen to keep me warm. That search led me to Midnite Ramen in Wallingford, and it did not disappoint. This spot is straightforward and no-frills—you order at a kiosk around the back, pick up your food yourself, and your meal is ready super quickly. No long waits here, just hot, delicious ramen when you need it. I tried the spicy tantanmen with minced beef, while my husband opted for the shoyu beef brisket ramen. Both were fantastic, with generous portions of perfectly cooked noodles and tender, flavorful meat. The noodles, in particular, had that ideal chewy texture that makes every bite satisfying. This was one of the best ramen joints I’ve been to in a while. Midnite Ramen shares its space with Figurehead Stoneway, so you can pair your meal with a beer. It’s the perfect combo during a cold winter day. I’ll definitely be back to try more of the menu—or just to indulge in another perfect bowl of tantanmen.

However, looking at the signature ramen items, highly recommended and a place I would return to before basically any other ramen joint in Seattle.

Pretty solid Miso Ramen! My order came out within 15 minutes, which felt very fast considering how busy the brewery was. The noodles felt a little soggy but overall the flavor was delicious.

Some helpful ordering instructions, since it was a bit confusing for everyone.

Step 1: Order ramen at the midnite ramen food truck window (inside Figurehead Brewing). You will receive a buzzer and pay after your ramen is ready Step 2: If you want sides, order from the midnite ramen touchscreen kiosk (horizontal on the table, not vertical/ free-standing). If you want gyoza, each ticket is one serving (5 or 6 pieces, I can't recall, I ate them too quickly). At this time you can order multiple gyoza tickets and redeem as many as you like. I accidentally thought each ticket meant one single gyoza, so don't make the same mistake I did! Step 3: Return when your buzzer rings, or your get a text that your sides are ready.
