Having met Tommy (Owner) while construction was still in its infancy stages, he literally and figuratively walked my wife and I, strangers at the time, through his vision. The Bar he wanted. The Bourbons and Whiskeys he would pour. The food they would prepare. The layout of the restaurant, everything. It was from that moment just feeling and seeing his passion, we knew something special was to come.
Fast forward 9 months, the wife and I went back with the intent to visit The Ballard Cut to see how things were progressing and we were not disappointed.
Upon walking in we were greeted with beautiful bottles on top of beautiful bottles and a familiar face, Tommy!
His once vision, now a reality.
Early on in our conversation, he made it clear that his intent was not to purchase everything but rather only Bourbons and Whiskeys he's tried and loved, nothing less than that. After a 5-minute conversation with him, to say that this is a passion of his would be the truth! There is no compromise and his taste for high end bourbons and whiskeys are a connoisseurs delight. He has verticals and horizontals that go back several years and would challenge most other high-end bourbon and Japanese whiskey bars in the state. Examples would be 4 Roses L.E. runs from 11-18, GTS 08-19, EC 18 yr, 20, 21, 23, EH tornado, THH 6,12,13,14. WLL 08,12-14, Master collections, Old Forester's Birthday's 08, 13, 14. As I mentioned earlier, beautiful bottles.
Tommy's love for bourbon is only rivaled by his passion for Japanese whiskey. He shared a story about how he was able to recently procure a bottle from the 70's that's yet to arrive. We were all smiles listening and it was 100% awesome. Examples of his Whiskeys that were available are Hibiki 12, 17, 21, Nikka everything (including releases only in Japan), Kurayoshi, 12, 17, 8 yr Sherry cask, Matsuri Sakura cask and so much more.
We had a few small plates that hit the spot! The grilled octopus, crispy pork belly and crab and avocado salad. Simple in presentation yet big in taste and flavor. Just the way we like it! Our plates were spotless by the time we were done.
The level of service and care cannot be overlooked. Everyone was more than hospitable from the time we walked in to the time we left just making sure we were taken care of. From drinks to food, nothing was overlooked. Thank you!

   Read moreI was here based on my colleagues recommendation. It looks like a small village when you come to this area. Something completely different from the city. I made a reservation for myself and my friend and we reached here before our reservation time. We were given an option to sit outside otherwise they can keep our table by the time it's our reservation time. It was windy and chilly so we decided we would walk around and come later. As I said it's a small village because most of the stores were closed at 7 pm on a Friday evening. We walked around and chatted standing there until we were called to be seated. It's a small place not much of a seating area inside but they have extended outside seating. I'm sure it will be good on a sunny day. As soon we were seated we were served water with a menu card. We ordered appetizers such as Thai chicken wings and I asked for a green tea with lemon and honey. We were busy talking and the place was crowded, it was very loud and there was music played as well. A perfect Friday vibe. One thing about this place, the food is Michelin kind and the ambience is that of a sports bar. Anyway expect delay because it's a bit laid back as we got our appetizer late and when we got we got our main course as well. The server apologized and we also didn't say much. It tasted good too. The server who served us was nice and courteous. Overall I had a good experience. Loved their whiskey bar. I was pretty sure there's a story behind that whiskey bar and someone very passionate about it as well who must be managing it. Since it was crowded I didn't get a chance to interact with the bar attendant otherwise I wanted to ask about Rum đ. I will definitely go here next time but day time as the lights are very dim.
