If I didnât hear that they are in the back of the Sonoma cheese Factory i would had miss this place.
The decor is not much to write about. Some wood tables and metal chairs. They have some out door seating too but I sat inside. this a pure just a matter of business kind of place. The business of eating.
The menu is short and I was thinking the tri tip or the brisket and the server said go with the brisket Sandwich. So that was the choice. Service was fast and easy.
The brisket Sandwich came out and it was topped with pickleâs and pickled purple onions on a sweet bun. It came out on a plastic tray lined with parchment paper. Nothing too impressive talk about but the sandwich is the star, front and center waiting to be honored.
After taking a photo, I noticed the brisket sandwich and they gave me some savory delights featuring tender slices of lean and some fat. For those who donât know, the lean is just that.. lean and a little drier where as the fat is oily, juicy and moist. Just lean is too dry and just fat is too oily. So a few slices of each is the perfect blend of the slow-cooked succulent meat with the required smoke ring.
My first bite and I could taste the light smoky flavor from the hours long cooking process. Next to the brisket was container of savory au jus. The crunchy pickles add texture and freshness where the picked onions add a slight tanginess.
With each bite, you're treated to a harmonious blend of rich, melt-in-your-mouth brisket making it a quintessential comfort food indulgence.
I asked about the process and wood. They use Red Oak wood which is a hardwood that burns slowly and evenly, producing a mild smoky flavor that pairs well with a variety of meats but It pairs particularly well with brisket, producing a rich, smoky flavor that complements the beefâs natural flavors.
This a great down to earth kind of place, for a fast meal in an area that is normally so over priced. So why the four stars, well to start, I could not get a bourbon with my brisket sandwich which is the perfect pairing. The sandwich which was great really didnât fill me and I left a little hungry. The menu didnât offer brisket by weight⊠if it did, I would had gotten 1/4 or 1/2 pound plus beans or the Mac and cheese. It was only when I left did I learn that they sell the brisket for $36 per pound but itâs not on the menu??? Why not?? This is serious oversight and would be so simple to fix.

Intrigued and hungry, we had to locate the source, and it led us straight to The Butcherman! Finding a spot with truly delicious smoked meat can be challenging, but this place stands out as the best BBQ I've ever had.
I ordered the Tri-Tip sandwich, and it was a game-changer. The portion was generous, easily big enough to share with a second person. The meat was tender, juicy, and perfectly smoked, making every bite a delight. The sandwich was so flavorful and satisfying, it left a lasting impression.
Their sides are also in shareable serving size bowls, and we couldn't resist trying the Mac and Cheese and Potato Salad. Let me tell you, WOW! The Mac and Cheese was creamy, cheesy, and simply divine. The Potato Salad was equally impressive, with a perfect balance of flavors and textures that made it a standout.
Beyond the amazing food, the staff at The Butcherman were fantastic. They were friendly, welcoming, and exuded an energy that showed they truly love their jobs. Their enthusiasm added to the overall experience, making our visit even more enjoyable.

You will be so happy to get the best of more than just one sandwich melting in your mouth. We got this time the brisket, the BLT, and the Turkey sandwich. All were superb in flavor, freshness, presentation, all the above. They also have a wide range of specialty drinks, so don't miss out and grab one to go along with your meal. We just love stopping here every time we are in the area. Park at the town park and eat, then stroll the shops around the park. It's so lovely, and there is history right there, too.
