Overall this was a great joint for basic tonkatsu ramen. The broth has great flavor, but a little thin. The pork was good, not great - a little light on flavor, but I attribute that to the lack of fat and the thin slices. The egg is outstanding - amazing flavor and cooked perfect. The noodles are also excellent - al dente with good flavor. They could add a few accoutrements to jazz up the dish, but overall they’ve got the essentials down for a tonkatsu ramen. The one thing I don’t like is the plastic dish and plastic spoon even when you’re eating “for here”, but I get it - you’re serving this out of a food truck and aren’t trying to wash dishes up in that thing. The food truck rally atmosphere is great, but a little cramped and dirty.

Without doubt the best ramen in the entire Midwest. To even get real competition you need to go to the coasts. If you know your ramen look at the ajitsuke tamago! We eat here at least once a week and I've never seen one tamago less than perfect. The whole team are the nicest people! The entire menu is outstanding. Whether you think Frank's Red Hot sauce is several bridges too far or you enjoy Carolina reapers they can find the right level of spicy (or no spice) for you. I've been meaning to leave a review forever, but I wanted pictures and we keep eating the food before I remember to take pictures lol. It's a good problem to have.

If you stop anywhere in Traverse City, you need to stop at folsend ramen. Not only are they the cutest food truck north north of grayling but they also offer amazing food and amazing experience and the kindest people work there. Please if you do anything once in your life stop at fols and ramen cuz they are amazing and they are working their butts off to make us happy. The noodles are springy. The broth is Rich. The vegetables are fresh and all of the poultry chicken and beef is locally sourced on easy to read signs on their food truck. Please come here whether it's in the summer, spring or winter. They are open at least a couple of days and they still have an amazing product...

EXCELLENT! Welcoming atmosphere and music as we approached. Quickly greeted by a respectful host who took our orders but then We then found our self at the adjacent bar ordering some drinks and it was only 5 minutes or so after sitting down and our food was ready! The aroma was mouthwatering as steaming bowls of ramen made it to our table. The taste of the broth was to die for! Noodles were perfectly al dente, pork melted in my mouth and ive never had a better soft boiled egg. It is beyond a recommendation, this place is an absolute must eat at if you can.
