Run, don't walk to this new spot in Watauga, right off Denton Hwy. I kept seeing this new spot as I would drive by and today was the day I stopped in to see what goodies they have. Let me tell you....the menu offers a wide variety of food. Street tacos, Cali style burritos, Enchiladas, Seafood plates and lots more, even Breakfast. I was greeted by both gentlemen working and scanned the menu to see what I wanted to try. After one of the gentlemen eagerly answeres a few of my questions I decided on the street tacos and ceviche tostado. I ordered two birria and one chicken street tacos. The birria meat was so flavorful and fresh. They come with cilantro and chopped onions. After my first bite, I knew I picked the right place to eat. The chicken was good too, but that birria meat was on point! The ceviche tostado was piled high and topped with fresh avocado slices. It was good as well, I am just not use to the tomato sauce style. I ate it all, but not sure I will order it again. I prefer lime juice to the tomato style, but it was super fresh and the tostada was crunchy. They also have a fresh salsa bar that offers all you need to top your food selection. I will be back and look forward to trying more on their menu. By the time I left the place was packed with customers all ordering different items. It gave me some ideas of what to try next time....the nachos perhaps or a combo plate. Great spot, clean with super nice, friendly and helpful staff. Thanks for a great meal and service.

Almost everything about my visit to Vaqueros was five star, even though I didn't really care for the particular burrito option that I ordered. I went in craving a typical breakfast burrito (eggs, potatoes, and some selection of meat), but ended up going with the machaca out of curiosity. The flavor was good and it was fresh tasting and filling-a little too filling. This burrito is 95% meat, maybe 3% onions and peppers, and the rest is cheese. The tortilla is nicely toasted and fresh tasting as well. I would call this a 'manly meal'. For me it was just too much meat. The service was great and the ingredients were fresh, so I will definitely consider going back for either a typical breakfast burrito or one of the other dishes. The agua fresca melon drink was okay. I'm pretty sure it's not fresh made from melon, but instead made from a concentrate mix, which is okay. Overall I had a good experience here and would recommend it to others looking for freshly made Mexican food, prepared quickly, by friendly people. I ate about half of my burrito, which was enough to fill me up for a day of dog walking. I also ordered a side of refried beans. They were quite bland. That's the only reason why I did not get five stars for the food.

Edit! I would like to say I have this joint another try. It was fantastic! I ordered the California burrito. I added pico and it was amazing!!! It wasn’t leaking fluid. It was hot. It was full of protein. Way to go. We will be repeat customers. I just tried Vaquero’s for the first time. I ordered their super burrito through UberEats. I didn’t like the fact that there wasn’t an option to take the lettuce off. I’m not a fan of warm lettuce but, whatever. When it arrived it was cold to the touch except for one small pocket on the very large burrito. After taking several bites and not finding any protein I unrolled it to find that my assumption was correct. That small pocket was the only meat in the burrito and it was mostly rice, sour cream, lettuce, beans, etc. this burrito also immediately started pooling at the bottom. Now if I kept it wrapped in the thin paper or not, it would’ve been a mess. I’m glad I grabbed a paper plate before opening it. When you spend 12$ on a burrito you expect the dollop of sour cream to be smaller than the protein. Their salsas are good.

This is my family's new go-to mexican spot, we've already been here several times. Here's my honest review, though keep in mind it is mostly based on our personal tastes: My husband is from San Diego and has been missing and on the hunt for Cali style carne asada burritos and fries. Or just something not tex-mex lol We found it! The chili rellenos and enchiladas are also good (the red sauce tastes just a little too much like tomato paste though). All the salsas have great flavor but unfortunately are just barely too spicy to really enjoy, even though we usually can handle spice. Maybe that's just us 🤷🏻‍♀️ The carne asada burritos and fries are where it's at, although I see they sneak in some ground beef chunks along with the steak...Honestly, with this economy and how great it still is, I'm not even mad lol, still feel like I am getting my money's worth and I'm happy. Tbh I did not like the beef sopes, I was really disappointed. Keep in mind the beef they use for some of the dishes is shredded/pulled beef, it says it on the menu. This was strange for me but really my complaint is with the way it was seasoned and it had tomato and green pepper chunks that made the whole thing taste like a nasty bowl of texas chili. Just my honest opinion, maybe I'll ask next time if I can get some of that ground beef instead (; But again, love this place, the store is always so clean and the horchata and jamaica are great too. My dad has liked the tostadas, tortas, rolled tacos and fish tacos. We have dined in, gotten take out, and ordered online and all were good. We look forward to trying more on the menu including the menudo! We wish the best...
