UPDATE: So the owners responded to my review and then reached out directly. They understood my concerns and provided me a gift card to give them another chance and to try their homemade items. In NO WAY, shape or form did they 'bribe' me in altering my review. They simply just care about their business and the quality their customers receive. So here' is my update based on that experience.
I tried the pork gyros sandwich and I thought it was much better than the 'classic' gyros. I mean, you can't go wrong with REAL meat. In addition, the sauce meshed well with the pork. The pita was still still 'chewy' and not particularly complimenting to the sandwich.
I next tried the chicken gyros sandwich and found that was also very good. Chicken wasn't dry, a bit salty for my taste, but hey, everyone's a critic right? Others may find it not too bad. To be fair, it wasn't overwhelming either. Again, the sauce complimented the chicken very well. The lettuce on that sandwich was a surprise, but worked well and didn't get soggy. MOST important, the pita was a better quality and cooked nicely and not chewy or cold.
The owners admitted in our correspondence that they tried a new brand of pita they weren't happy with, so may be they switched back? IDK.
I didn't try the potatoes on either of my re-visits, because in the sandwiches, you get a small handful of fries and I have to admit, they're delicious!! I'm not even a fry guy.
I also didn't try a plate and just sandwiches, but I hope they realize a gyros plate should come with 2 pita's MINIMUM!
So, based on my experience in talking with the owners and seeing how much they actually do care about their business and seeing the quality in the homemade items, I have upgraded my review from 3 stars to 4 stars.
I wish them the best and would be back to try that chicken gyros. I just have to wrap my head around a gyros and side of fries being $18, seems insane to me.

Underwhelming and just average. Had the gyros plate HOPING for homemade gyros meat, with the place being a "street food" joint. Got the usual frozen stuff. The pita bread was chewy and not fluffy and NOT homemade either. The "Tzatziki" may have been homemade as it was creamy, but had ZERO cucumber, dill or even lemon flavor and was more like a Lebanese garlic sauce, than a refreshing cucumber sauce.
Greek potatoes were hard and undercooked.
That all being said, grilled onions instead of raw are extra. (I got NO TOMATOES, but didn't get a DISCOUNT for that, lol). Gyros plate had plenty of meat, sauce and onion, but only one pita. Makes no sense.
So essentially paid $26 for a 2 gyros and a drink, (since I had to pay extra for the pita). I mean, yeah, everywhere is expensive, but this place, like the others, nothing special. Could've had a nice meal with table service, soup and salad for that. I mean a Kronos gyros plate is like $14, (EVERYWHERE else) and that DOES come with 2 pita and no extra charge to grill onions and this place IS NOT better than that and IMHO the garlic sauce needs to go.
Might do well for people who don't know any better on what street food is supposed to be. For me, I wanted to try it, I did and now I'm passed it....

A fun fact: they even have olive oil soap!

Food Quality & Taste: The Pork, Lamb, and Chicken Gyros were a treat – extremely fresh, flavorful, and seasoned to perfection. The combination of pita, tzatziki sauce, tomatoes, onions, and steak fries in the wraps creates a culinary "Taste" in your mouth. The Mythos Beer is light and complements the menu beautifully. The Greek Fries, generously topped with feta and onions, are shareable and delicious. While the Baklava was good, it didn't stand out as much as the other dishes.

They had three parking spots reserved for pickup orders; there is a QR code on each spot, and you can order from your car on your phone. When we walked into the restaurant, we were greater by a rustic beachy vibe. All of the tables had long backless picnic benches, and the large hightop table had back stools. All of us are over 60 and had trouble getting in and out of the benches and would appreciate a traditional chair option. The menu is extensive and only over the counter. We were standing there for a few minutes and had questions. My friend said he felt rushed by he counter staff. There were three other tables there, but the restaurant did not seem busy. We got our food and found huge portions. They use red onion at this lace, and other gyro stands in Chicago I have been to use white onion, but it did not deter from the sandwich. The gyro platter had 1/2 pound of meat, plenty of onion slices and half of a large tomato, sliced. I had the pork gyro; I found it vary salty. I am not sure if the pork gyro was the same as the pork belly gyro featured as on Tuesdays for $8. Two of my other friends had the chicken gyro. We had to ask because they also had a grilled chicken pita. The difference is that the grilled chicken pita is a chicken breast on the char grill, and the chicken gyro is white and dark meat cooked on a spigot. Again, there is a huge amount of food. On the chicken gyro, surprisingly, the sandwich had two fries inside, both chicken Gyros and my pork gyro had two fried potatoes each.
