A Banh Mi shop you should visit while in Hoi An.
The people are so nice, and the sandwich is affordable, packed with filling, and delicious. I love that they scramble the egg instead of frying it like usual.
However, I came with high expectations after having an incredible meal at their eatery, so I did expect more. Here are my suggestions:
I would make the Pork Charsiu Bánh Mì because they already have fantastic char siu. Everyone in town sells the same cold-cut Vietnamese Bánh Mì.
I would keep the avocado in slices for better texture and less mess, especially since Vietnamese avocados tend to be more watery.

I'm not vegan but eat everything and this is easily the best V/VG Banh Mi I have had in all of Vietnam. It contained grilled Aubergine, Mushrooms, Tofu and Seitan cooked in Lemongrass. A sweet chilli chutney and classic salad. I added Avocado. Bread is fresh and it is packed full to the brim.
