Tucked just 30 kilometers from Frankfurt Airport or a breezy 25-minute train ride, the Brunfels Hotel in Mainz - part of Hyatt’s Unbound Collection - opened its doors in August 2024. What was once the Hilton City Hotel Mainz has been completely reimagined by Kirstein & Rischmann into a serene, herb-themed retreat inspired by German botanist Otto Brunfels. The transformation is more than cosmetic: natural materials, soft lighting, and botanical touches create a calming atmosphere that feels both modern and rooted in place.

The hotel features 127 rooms and suites spread across several floors, all dressed in warm wood accents and pastel tones. I booked through Hyatt Privé and was pleasantly surprised with an upgrade to the Junior Suite Deluxe. At 39 square meters, the suite offered a generous layout with a separate sitting area, king-size bed, climate control, and a 55-inch Chromecast-enabled TV. The complimentary minibar—refilled daily—along with coffee and tea-making facilities added a nice touch. My room, located on the attic level, had a rather modest view, which didn’t quite match the elegance of the interior, but it wasn’t a dealbreaker.

Love the newest Hyatt property in Mainz. It was my first Unbound experience and I'm impressed. I stayed here one night with family when the HR Mainz was sold out and it was a stunningly beautiful property. Every piece of furniture was extremely comfortable. Beautiful finishings with a color palette cleverly skewed green after their namesake Otto Brunfels, a noted botanist from Mainz. As a Globalist, I was upgraded to a beautiful junior suite deluxe room with a gorgeous bathroom. Air conditioning is extremely strong and rooms have individual thermostats, excellent water pressure/temperature for showers, and if ordering a la carte at breakfast, make sure you get the omelettes. The breakfast buffet is smaller than Bellpepper's at the HR Mainz but every item was made in-house and very high quality. Advantages over the HR Mainz; much stronger a/c, rooms are brand new, location is very close to the Mainz train station, much larger selection of English language TV channels, larger number of suites. Compliments to Mehdi who was quick to help me with a service issue. If you're looking for a luxury boutique experience in Mainz, then look no further than the Brunfels Hotel!

Neu renoviertes Hotel mit klassischem Chic. Hervorragender Service, ein top Frühstücksbuffet und tolle, makellose eingerichtete Zimmer mit allem Comfort eines 5 Sterne Hotels heben diese Unterkunft bemerkenswert von anderen vergleichbaren Angeboten ab. Modernes neues Zimmer mit klassischem Chic, hochwertig eingerichtet und bis ins Detail durchdachte Einrichtung die wirklich überzeugt. Hervorragende Betten, leise (auch zur wenig befahrenen Straße), dem Standard entsprechende Ausstattung mit allem was man braucht. Tolle Hygieneartikel (Seife riecht hervorragend). Mini Bar mit Getränken und kleinen Aufmerksamkeiten ist inklusive und wird jeden Tag aufgefüllt. Zimmer lässt sich sehr gut abdunkeln. Sehr großer hochwertiger Fernseher. Wir hatten das Frühstücksbuffet im Zimmerpreis inkludiert. Das Frühstück ist spitzenklasse, hochwertig und mit allem was man sich wünscht. Zusätzlich gibt es eine tolle Frühstückskarte aus der man sich weitere Speisen aussuchen kann. Das Restaurant ist hochwertig eingerichtet, die Atmosphäre sehr gut. Jeder hat seine entsprechende Privatsphäre und die Tische stehen sehr großzügig. Ein tolles Erlebnis. Kleine Abwertung: Der Service beim Frühstück ist in einigen Bereichen noch verbesserungswürdig. Es passiert immer wieder dass Dinge nicht rechtzeitig aufgefüllt und nachgelegt werden. An einem Tag ging sogar die Brötchenauswahl zur Neige und es gab fast keine Auswahl mehr. Das darf einfach in einem Hotel dieser Klasse nicht passieren. Hier fehlt es wohl etwas an direkter Aufgabenverteilung (man konnte erkennen dass im Restaurant die Servicekräfte für alle Dinge zuständig waren). Trotzdem: dass hier kein falscher Eindruck entsteht, das Frühstück ist wirklich "Bombe"

The breakfast buffet is smaller than Bellpepper's at the HR Mainz but every item was made in-house and very high quality. Advantages over the HR Mainz; much stronger a/c, rooms are brand new, location is very close to the Mainz train station, much larger selection of English language TV channels, larger number of suites. Compliments to Mehdi who was quick to help me with a service issue. If you're looking for a luxury boutique experience in Mainz, then look no further than the Brunfels Hotel!

Neu renoviertes Hotel mit klassischem Chic. Hervorragender Service, ein top Frühstücksbuffet und tolle, makellose eingerichtete Zimmer mit allem Comfort eines 5 Sterne Hotels heben diese Unterkunft bemerkenswert von anderen vergleichbaren Angeboten ab. Modernes neues Zimmer mit klassischem Chic, hochwertig eingerichtet und bis ins Detail durchdachte Einrichtung die wirklich überzeugt. Hervorragende Betten, leise (auch zur wenig befahrenen Straße), dem Standard entsprechende Ausstattung mit allem was man braucht. Tolle Hygieneartikel (Seife riecht hervorragend). Mini Bar mit Getränken und kleinen Aufmerksamkeiten ist inklusive und wird jeden Tag aufgefüllt. Zimmer lässt sich sehr gut abdunkeln. Sehr großer hochwertiger Fernseher. Wir hatten das Frühstücksbuffet im Zimmerpreis inkludiert. Das Frühstück ist spitzenklasse, hochwertig und mit allem was man sich wünscht. Zusätzlich gibt es eine tolle Frühstückskarte aus der man sich weitere Speisen aussuchen kann. Das Restaurant ist hochwertig eingerichtet, die Atmosphäre sehr gut. Jeder hat seine entsprechende Privatsphäre und die Tische stehen sehr großzügig. Ein tolles Erlebnis. Kleine Abwertung: Der Service beim Frühstück ist in einigen Bereichen noch verbesserungswürdig. Es passiert immer wieder dass Dinge nicht rechtzeitig aufgefüllt und nachgelegt werden. An einem Tag ging sogar die Brötchenauswahl zur Neige und es gab fast keine Auswahl mehr. Das darf einfach in einem Hotel dieser Klasse nicht passieren. Hier fehlt es wohl etwas an direkter Aufgabenverteilung (man konnte erkennen dass im Restaurant die Servicekräfte für alle Dinge zuständig waren). Trotzdem: dass hier kein falscher Eindruck entsteht, das Frühstück ist wirklich "Bombe"
