In terms of gluten free there was a paella stand (naturally gf and the sign says gluten free) as well as GFree donuts who fry fresh donuts (absolutely delicious).

I also noticed a sign saying gluten free pies were available, as well as a baking stand offering gf options. I'm not sure if these two would be coeliac safe - best to check for CC...
