Une première fois chez cet artisan chocolatier qui m'avait été recommandé et ce pour les Fêtes. Meilleur ouvrier de France en 2004. Eh bien, ce sera la dernière...Quelle déception ! Pour nous et nos invités Amateurs de chocolat, ce ne fut pas l'explosion en bouche comme espéré. Nous n'avons pas apprécié ces chocolats, certains bien trop salés (il ne s'agit pas des fleurs de sel, je précise) et bien loin des chocolats traditionnels que nous aimons. Il est fort probable que nous avons été déstabilisés par trop de créativité et une dérive de parfums et de saveurs inhabituels tels le poivre et thym citron et par certaines bouchées travaillées à deux textures dont les ganaches aux fruits qui nous ont éloignés de la simplicité des chocolats authentiques.
