First visit.. VERY dissatisfied. I'm a central Louisiana native and was overjoyed that some good ol back home treats would now be less than 3hrs away..
After a long hard day at Michael E Debakey VA Hospital. [And I do mean long &hard]. I Call to confirm there was a chicken and sausage only option for gumbo and to ask if there were boiled mushrooms..The lady answered my questions and said please be mindful that we close at 7:00. I drive the 33 mi one way in 5:00 traffic for 1 hour, arrive at 6pm on the dot.
Get in line, order my cracklins and boudin about 6:20, (it was busy and the employees have zero sense of urgency and no situational awareness), & tell the young lady that I also want to get Gumbo. she tells me that I order at the next register. As I receive my cracklings and boudin and waiting to order my gumbo, the customer in front of me received pork cracklings instead of chicken cracklings and the order must be corrected. As they are correcting the order, the employee just continues to stand there and look at the customer talk to their partner while the order is being corrected. Basic customer service would have been to ask the customer to step aside briefly as their order is being corrected and the employee should have ensued to help the rest of the line as it was still building and it was already after 6:00 p.m. After standing there another 10 minutes waiting on their cracklings to be corrected, I tell the young lady I want to order gumbo. She informs me that the kitchen is closed. And that it closed at 5:30. Such a waste of time and had I known that the kitchen closed at 5:30 I would have arranged to go a different day when not driving from the medical center. The gumbo was supposed to be my supper; I ended up driving 54 miles in total only to not get everything that I was trying to receive.
I have not gone back on Google or the website to see if there's anything listed that the kitchen closes at 5:30, however, there were two opportunities for the employee to inform the customer: #1. The phone call when the customer asked about gumbo should have alerted the employee to say the kitchen closes at 5:30. #2. When ordering the boudin and cracklings and then asking where to order gumbo that should have alerted the employee to say sorry the kitchen is closed, it closes at 5:30. Two different employees that were unaware.

The customer service coupled with the flavoring of the food is the reason people drive 1-3 hours to try BOUDIN, CHICKEN CRACKLING PORK CRACKLING, BURGERS and BOUDIN BALLS.
The moment you walk into the door, a employee is greeting you with an authentic smile and warm welcome. Then you are overjoyed with the FREE SMELLS and SAMPLES. From hot food to frozen food you can surely get your DOWN SOUTH fix of the country flavoring and down home cooking.
My favorite of course is the WARM CHICKEN CRACKLING and PEPPERJACK balls. They are absolutely delicious and taste homemade just like the original location. I merely need my fix often and it never fails.
The SMOKED BOUDIN, vs the REGULAR BOUDIN, I prefer the smoked but it's pepper flavored is surely kicked up a notch. It is more dense compared to the regular which is more wet and flavored. My recommendation is pairing them with the FLAVORED CRACKERS. Oh my goodness you will not regret the drive or choice of food.
Now let me talk about these burgers. They are pure ground beef with some of the best mixtures to make your mouth savor and bite your finger if you are not careful. The special bread has a slight sweet flavor; however, you can always substitute for regular bread if necessary. I am always asking to make changes and I am please most of the time. Ii have to admit there have been room for improvements through customers feedback.
If you are just needing A CAJUN FIX, I will be the first to say try some of the fresh food which requires preparation at home. There is a huge variety and great choices.
The team is lead by one of the best executive teams. Alexa the marketing director is so kind and sweet. Aaron the general manager is always willing to lend a helping hand.

The crawfish etouffee ( Frozen ) was good but the crawfish were small and also some were shredded, the gravy / roux is very good! $25 riding the line of sit down dine in restaurant prices, bigger portions than a restaurant.
The chilli ( Frozen ) taste kinda like sloppy Joe, it has onion and tomatoes in it but no beans. Not my preferred taste. It's not sweet but I wish it was spicier and more savory.
The BBQ burger was ok the sauce was good onions were fresh. both the burger and the po-boy can be customized I only got sauce and onions.
Stuffed bell pepper was good!
The sausage po-boy was very good but again kinda expensive for a single link sausage sandwich. $14 No fries no drink!
The wraps ( egg rolls ) were amazing the regular and the spicy, the spicy isn't too hot, it's not mouth burning.
The boudin balls were fried golden brown crispy on the outside soft on the inside very good!! The paper Jack cheese is mixed in with the boudin mix, a lot of places I been to inject it with cheese or place a square cut of cheese in the inside before frying them. Again not hot or mouth burning... Not even hot IMO.
Store has fresh cuts of meat, turducken, Cajun fried Turkey, bacon wrapped chicken, cracklings, smoked sausage, smoked boudin, big displacement pots for boils, lots of seasoning, hot sauces, boils, Louisiana based food products some that can be found at other stores some exclusive here. Jarred food and sauces. I believe they cater or offer big quantities.
The store was clean, there is a seating area. If you are ordering regular and non spicy mixed and feeding spice sensitive people ask to have the containers labeled I couldn't tell the regular from the spicy by looking but could taste...
