I have been to sens fusion on multiple occasions and the quality of food and attention towards service has been very good until now. Its very disappointing to see so much inconsistency with the food there. 1: soufle pancakes were genuinely raw (im aware it is usually softer to some degree and less cooked compared to a standard pancake) . Im not sure if this is just a error in cooking but when we sent it back and got it remade, nothing changed. The table next to us had significantly more cooked pancakes, and also the other times we came it was fully cooked, which is questionable towards the consistency to the food. It was so raw that it was basically liquid egg whites in the middle.
2: The cutlery is very dirty, there are visible stains and it just seems like there is no care towards keeping a standard. Other establishments that provide cheaper food the silverware is properly dried/polished before storage, and it is just very offputting.
3: The taste of food was inedible, and coffee just tasted bad. The pancakes just tasted like raw eggs, and had no structural integrity. the coffee is just so bad considering the median price for drinks is atleast 7 dollars. Additionally I do not expect an authentic italian taste at a fusion restaurant, but the napolenta pasta tastes very sweet, but also underseasoned, just reminded me of heinz canned pasta.
the service was good though, and the servers were very kind and accomodating, and the general area...

The young lady still saw me waiting, and prompted the barista lad to make the coffee. The young lad still didn't budge, he eventually brewed the soy milk and a new customer came. Left the the soy milk there after being heated and took their order instead of finishing off mine.
I asked him 'why it took 10 minutes to make 2 coffees', there was not even a line. He said it's hard doing juice and coffee by myself, (yet he had an assistant their who took my order?) I am a barista myself and told him 'this wait time would only be understandable on a weekend' (especially with no line), I got no apology. Not suprisingly my coffee was luke warm. Waited so long but the coffee was still made in a rush, as it was obvious the way he poured killed the crema. Fair enough if it was fast, but if you wait me wait that long, I expect it to be made right.
The minimum advice I can give to barista lad if you know I'm going to wait 10 minutes, let me or the cashier know in advanced. I would've gave an extra star if the barista lad at least applogised for the wait.
Side note: coffee bean was good, unfortunately the experience this...

Previously, the souffle pancakes blew everyone away, and I believe they are actually getting better. But let me rave about the mushroom pasta!
The mushroom pasta is a nourishing embrace that I never wanted to end! At least 3 different types of mushrooms, an earthy umami broth, and pasta perfectly al dente. I am still lingering in heaven as I write this.
MASSIVE well done to the owners and staff of Sens. Keep it up, we love your food!!
Update: 18 November 2023
The menu has been updated and I they've done it again: pure delicious extravagance! I tried the mentai pasta today 🤌🏼👌🏼The souffle pancakes some of my friends had honestly gave me some food envy 👀. Knocked it out of the park again Sens! This honestly beats some cafes in Melbourne! Besides having an amazing menu with wide variety and interesting dishes, the quality of food and beverage served here is commendable.
We've only been twice so far but both times were outstanding. I love that there is genuinely good matcha latte served here (though I would prefer my matcha completely unsweetened, the base has some sugar added) - no lumps unlike other places.
Food-wise, flavours pop and eggs are cooked perfectly. Nothing to fault. Karaage is a standout, just delish.
We...
