Evolve Spirits Bar — Restaurant in Hobart

The unique atmosphere of evolve makes it well worth the walk over to MacQ1 to start your night or finish it with a night cap. As you walk in the door there is an impressive and stunning dinosaur skeleton inside a glass case spanning floor to ceiling. The rest of the bar is decorated with impressive fossils adding to the atmosphere.

The drinks are well presented and priced as you would expect and the drinks and whiskey list are impressive.

*If you're a connoisseur and feel like there isn't much on the drinks list you are looking at, ask for the full drinks menu.

It's a relatively small space as you might expect from a hotel bar and helps to keep the space exclusive and transient, I wouldn't plan to spend the whole night here. On a busy night you can expect standing room only even after midnight.

I would rate this bar 5 stars if not for the pretentious attitude held by some of the service staff. Sorry guys, but you poor liquids out of bottles at premium prices while wearing gold bow-ties, you really can't afford to be rude to customers in...

Went last night with my partner as we we're staying at the Macq01 Hotel. The atmosphere was very inviting and we were seated quickly. Didn't take us long to decide what food and drinks we were going to have but after waiting around 20 minutes for someone to take our order we got up and left.

Around us there were only two tables and a small group doing a whiskey tasting, it definitely wasn't a busy night. We've seen staff cleaning empty tables, and chatting just behind us, but nobody seemed to care for us. As we left and looked back, they'd already cleared the menus off our...

Wonderful hidden gem! Went here for pre drinks before a dinner and had a winderful time. A great selction of drinks to choose from and in a perfect location. Although the lovely waiter accidentially spilt a wine over me, she went to the extra effort to make sure I was okay and supplied me with towels to dry myself, some complimentary nibbles and a couple of drinks. Accidents happen and I felt really bad for her but it made for a great laughing story between the group of family I was with! Looking foward to checking this place out again for the quailty drinks...
