Indulged ramen experience on a hidden spot on Harris St with tons of flavour in the bowl.
Arrived after 7pm on a weekday and waited for seat for around 30mins. There is a notice on the door to inform customers there will be a longer wait due to how they make and serve the ramen, and I can see there is only two staff working - chef and the waitress.
We took a seat after and ordered kaki fry (deep fried oyster with crumbed), pork gyoza, Katsuo ramen and the winter special Kani (crab) miso. We had our entrees served quite quickly the ramen is another around 20mins. But I would say all our wait on the night worths it.
The kaki fry is beautifully cooked with the crunchy coating and sweet, creamy oyster within. The gyoza is one of the best ones I had in Sydney - the shape is beautiful and the filling inside is nice and juicy. But even if you are quite hungry bu then, be careful when it’s just served, don’t risk putting the whole gyoza in your mouth since it’s quite hot inside :)
The seasonal special kani miso is charging a rather premium price point in Sydney’s ramen market and honestly I was hesitated at first but I am not regretting at all. The broth is full of flavour from the ocean with all the umami from the ocean (kelp, fish and crab). The flavour has many different layers and profound complexity. The fried soft shell crab doesn’t taste like frozen product and the crab meat gives another shot of strong and unique kani punch.
The Katsuo ramen is on the other end with a clear broth. With a lighter bodied broth, it’s silky smooth in your mouth and the flavour and tastes will unleash on your palate. It finishes with a subtle and elegant smokiness probably because of the syphoned dried bonito chips.
Niboshi ramen also has a light body but is rich in flavour. It starts from fragrance of dried fish (in this case would be dried sardine), and ends with natural well rounded sweetness of white radish.
Seasonal special miso ramen unveils another side of niboshi ramen broth. The savouriness brought by fermentation beautifully merged with dashi - a stronger punch of umami in this dojo. Recommended if you prefer a miso seasoned bowl of ramen.
Special shoutout to their menma - it’s not typical ramen bamboo shoot that is usually tender and marinated or infused in soy sauce. The menma is fresh and crunchy and the flavour of shoyu is light and just right to go with their broth.
This restaurant is a place for ramen and food lovers. All good foods need to be waited and the owner already told all his clients with multiple notice on the door and the menu. I do hope there will be more flexibility on the business hours, but I fully understand and respect the ramen and side dish they present to...

From the flavours packed in every sip the ramen gave, me and my cousin were in awe in just how good the flavours melded together. We both ordered Katsuo (Bonito) Ramen. We both gave simple nods and awes with every sip.
Three words, flavour-packed. Smooth. Unique. These were all in every taste provided by the ramen set before us. These also have to be my favourite kind of ramen noodles. Cooked so nicely, and a good texture when eating them, love to see it.
Fascinating I found how this ramen was made by a siphoning process which you could see happen before you when you walk into the small restaurant. The ramen easily is my top 3 of all time in Sydney. If you try any ramen here, with instinct I feel you will get a good ramen no matter your choice.
We ordered Wagyu gyozas which were delicious and cooked well. The Edamame we got was good, but it could of done with more salt as it tasted a little bland.
Conclusion: I wanted a reason to come here myself, which would be the track from where I live. After this night of seeing for myself if all the reviews were right, which they were, I will be visiting this place again. Even for a place that only opens when the sun sets, I feel confident the time and solace spent by myself will be made with good reason, if all for another taste of this restaurants...

It was a Friday night, me and my friends just finished watching out magic show in Pyrmont by around 8pm and we were luckily able to call through to get a table of 5 at 8:15pm. It's a nice and cozy ramen bar!
I really liked the theme of it all, especially how the outside how it's so simply decorated and the entrance with a few warm items for this winter. They don't have many seating, I'd say around 15 people at most. Good atmosphere though!
I ordered the katsuo ramen that seems to be their signature, takes around 15 mins for them to make as advised on the menu and it tasted really delicious and light! The broth didn't feel heavy at all. Felt like shio ramen if anyone had to compare it to something! Me and my friend also ordered some pork gyoza on the side to share!
My other friends ordered miso ramen, I tried some of their broth and it was also amazing! Felt a bit heavy and warm just right for winter, apparently it's a seasonal menu at the moment too! This is definitely a Japanese gem a bit away from the crowdy streets of the city and in Pyrmont! Check it out if you're a ramen lover!
