WOW WOW WOW!! I went to Maria last Thursday night for a business dinner. My colleague had never been to Hobart so all was new to him. We had a five-course degustation but each course has multiple dishes so it was more like 12-14 dishes for $120. That is good in itself but both of us wholeheartedly agreed it was one of the best meals we have had anywhere for a long, long time. Location unbelievable at the end of the wharf overlooking the water with views for miles. Restaurant layout, styling etc was super-organised, uncluttered, great colours, great decor, just perfect styling. The kitchen was quiet, organised, controlled and worked like a well-greased machine. Our server Joanne was just the right balance of engagement, fun, knowledge and professionalism & read our table perfectly. The food left us both stunned. Every single dish was sublime, well balanced in terms of flavour, texture, colours and left us simply savouring every single bite. We do not live in Tasmania but we found ourselves both working out how to come back to Maria with our wives. I know that some dishes will change to reflect seasonal climate and availability, but what would you change? We look forward to visiting Maria again soon. If you like a great restaurant experience from start to finish, go to Maria. You will 100% be impressed beyond your expectations. Well done guys, awesome job. I cannot recommend you...

We reserved a table, weeks in advance, in the Private Dining Room for 15 diners for 7:00pm. For our special occasion we had preordered the Degustation Menu.

We arrived on time and the wait staff took our drink orders, although I had to remind them of mine.

At 8:30pm, 1.5 hours after we arrived, we received small bowls of mixed olives, nothing else with it. After another 5 minutes, an even smaller dish arrived for the olive pips. Around 15 minutes later the remainder of 1st course arrived with bread, hummus & another small shared dish. Every subsequent dish arrived after long delays until our main meal of slow cooked lamb and vegetables finally arrived around 10:00pm!!! Dessert arrived around 15 minutes after we finished main.

Honestly nobody wanted to eat a heavy meal of lamb after 10:00pm. We (assumed as an apology) each received two desserts plus a glass of Champagne. Dessert was barely touched by anyone and the cheap “Champagne” received at most a single sip.

The reaction of the Front of House was “no care” and “no apologies”. This restaurant, the Chef and staff knew that there was a large group of 15 pre-booked for the Private Dining Room. They were not prepared, not organised and not responsive to our needs nor did they take responsibility for the disastrous situation.

Beyond superb ! Had been recommended as a must in Hobart and lucky that Joanna found a single spot for me on Saturday night. Sitting at the bar being able to chat to and watch the chefs cook, it was an overall brilliant experience from go to whoa. The mediterránean dégustation menu was phenomenal and great value considering the variety and quality and took the usual stress out of deciding. I chose my own wine but you are probably as well to go with the suggested pairings and which again was great value. Sultry on point fresh fitout with waterfront views to forever. The owner Christian kindly had a long informative chat and is clearly passionate about what he and his crew have created below his À la carte restaurant Aloft. Clearly cares for and has fun with his staff which rubs off on their fun but professional interactions with diners. Without exception the whole restaurant was rightly having a ball. I enjoyed a lovely Chef’s Menu at their sister restaurant Aloft the night before so had to repeat the experience again at Maria! Both restaurants have a refined and elegant decor - upstairs at Aloft being dark and moody, downstairs at Maria being light and softer. Aloft has Asian influences whilst Maria has Mediterranean influences, both incorporate the fresh produce of Tasmania. Chef Christian and his team were welcoming and very accommodating with my dietary needs, and requirement to leave promptly so I could attend Jimeon’s show at the Theatre Royal! I had my wonderful meal at the kitchen bar, watching the chefs prepare the food and hear the background story behind the restaurant’s name, and also about the ingredients in their dishes. I particularly enjoyed their elevated version of a cheesy garlic bread! I’ll definitely be returning again when I’m next in Hobart, and will ensure that next time I haven’t booked another event the same night so I can fully enjoy the experience!

When I asked the chef how they kept the yogurt from being sour, he revealed the secret — mixing it with cream, like panna cotta. Maria isn’t just a place to eat in Hobart; it’s an experience worth savouring.
