İ returned in search of nihari only to find that that specialty was not prepared today. I didn't feel like waiting for 40 minutes for the new kadhai batch [the more so as it would be of chicken, not of lamb (my favorite)] so I opted for aloo matar followed by dal. Aloo matar tasted great but was slightly oily so I switched, for my second course, to dal; dal was so good that I ordered and consumed an additional portion. I also ordered six chapati and one mineral water. Not what I intended to eat but wholly satisfactory. Tonight I was not seeking out chicken biriyani, but based on my previous two visits to this venue, if you are looking for chicken biriyani, Pakistani-style, in Baku, you need not look any further. Flavours of Flame is across the street from Hotel Olf, a useful landmark, easily found. Spices that are used are fresh and the biriyani contains all the spices needed; but I added chopped fresh chili, chili flakes and even some fresh ground red and black pepper that I brought with me expressly for raising the heat level. On June 9,2025, I came for my first visit (lunch) expressly to try the chicken biriyani. Portion-size was small but price, with one bottle water, was low at 13 manat. (I wanted to arrive early before the restaurant sells out; that happened to me one late evening when I was here last in Baku in winter.) For supper I would need to order a double or triple portion (on my second visit next day I actually ordered a quadruple portion) because the serving size is too small. I personally think that adding more chicken and raising price by a few manat would be better; but the chef is trying to keep prices down. Only major downside here is that there is not a menu with multiple Pakistani entrees of meat regularly on offer like mutton kadhai or aloo ghost or beef nihari so the only main course regularly offered is chicken biriyani. Mutton biriyani is not. Other items are prepared from time-to-time depending on demand. I did try chicken kadhai; satisfactory but, honestly, far from being the chef's best dish. I wouldn't order that again; simply not flavorful enough and the item should have been cooked and served piping hot on a kadhai (cookware) not on a plate. To my taste, moreover, mutton makes for a better kadhai than chicken. The venue is clean, cozy and well-decorated; the chef-owner is friendly and accommodating and the waiter is good too. Next time I want biriyani in Baku I shall go here. I lived over 20 years in Bahrain and have sampled many Pakistani style biriyanis in Manama; this is better than all other Pakistani style biriyanis I have tried anywhere; admittedly, however, I like Hyderabad style more.
