Ze stonden al enkele jaren op onze wensenlijst, geboekt voor een lunch op dinsdag in onze vakantie. Een groot naambord verraad de juiste locatie, het pand heeft niet echt uitstraling. Binnen is het relatief klein. Het restaurant is verdeeld over twee etages. Op de begane grond zijn de tafels van twee en drie met aan de straatzijde de open keuken waar we de chef in actie zagen. De inrichting is modern en efficiënt. We werden begeleid naar een plaatsje aan het raam, fijn.

Ik koos het aperitief van de kaart met open wijnen, dat werd voor mijn een Hongaarse Tokay Holass die goed beviel maar wel wat te koud werd gepresenteerd. De tafel werd helemaal gevuld met hapjes. In een kom bereidingen van mais, geschroeid, gemarineerd en een crème waarbij wat bieslookolie. Dat lepelde lekker weg. In het potje een warme bereiding van tomaat, olijfolie, aardappelmousseline en broodkrokantjes, zeer smaakvol. Brood soufflé gevuld met een ei salade. Pizza bianca, wat meer een toastje was met een subtiele groene salade afgewerkt met fijngesneden bieslook. Toastje met toefjes gefermenteerde boon afgewisseld met toefjes van chorizo. Om af te sluiten een tarteletje gevuld met venkel salade, pompoenpitten en dille, erg lekker.

De eerste begeleider werd keurig door de Sommelière gepresenteerd, een Italiaanse witte van het huis Marco Porello gemaakt van Roero Arneis 2018, fris en sappig, in het aroma tonen van bloemen. Uit de keuken een hele mooie presentatie. Als basis een ring van plakjes sashimi van hamachi, erop dun geschaafde radijs met dunne plakjes rode biet en partjes van kers, centraal een groene saus die aan tafel werd aangevuld met een tomatensaus waaroverheen parels van sesam. De smaak van de delicate hamachi ging op in de krachtigere smaken van het garnituur. De wijn was in balans. (7,5)

Een witte Saint-Chinian, Les Eminades 2017 van Montmajou, heerlijk aroma, redelijk complex in de mond. Op het bord een salade van boontjes in een saus van vin jaune, afgedekt met een dunne plak knolselderij afgewerkt met venkel pollen, bloemen blaadjes en kleine takjes verse kruiden. Verfijnde smaakjes die mooi combineren en werden aangevuld door de heerlijke wijn. (7,75)

Over naar rood met een Gamay uit de Anjou van Chateau Pierre Bise, sappig rood fruit met subtiele kruidigheid. Op het bord als basis een mousseline van bloemkool waarop een met miso gelakte zeeduivelfilet en assortiment verse kruiden, aan tafel afgewerkt met een bouillon van zeewier. Een mooie smakencombinatie die door de wat te krachtige wijn werd verstoord. De kruiden maakte de wijn nog iets complexer. (7,25)

Voor bij het pièce de Pratello uit Lugana, verfijnd en subtiel. Chef Marcelo Ballard presenteerde het pièce. Een bruin gebakken grietfilet met verse kruiden waarnaast een gefermenteerde tomaat waarover schaafsel van Pecorino, aan tafel afgewerkt met een jus van tomaat waarin wat (vintage) balsamico. Apart uitgeserveerd een krokantje van parmezaan en ansjovis met dotjes gel van balsamico. De griet was keurig gegaard, deze combineerde prima met de tomaat die hem wat sappiger maakte. De kruiden zorgde voor een aangenaam bittertje. (7,75)

De dessertwijn was een laat geoogste Tokaji 2017 van Jakab, rond en complex met nog mooie zuren. In de kom als basis een crème van cichorei (Koffievervanger) waarop ijs van bruine suiker en bereidingen van passiefruit, afgedekt met dunne plakken sesamkoek aangezuurd met yuzu. Dat lepelde lekker weg. (7,75)

Bediening was goed tot zeer goed verzorgd op gezellige meer informele wijze.

Samengevat lag de verwachting blijkbaar net iets te hoog en viel het alles bij elkaar toch enigszins tegen. Niet te min een aantrekkelijke moderne keuken met speciale...

The best restaurant in the world! I am in love with their chef with the stuff they r just so good in every measure! Creativity, ingredients, combination, textures.. I find their menu, every menu, surprising in the level of genus. This chef know not only the super accurate way cooking every piece of everything he also know so many products and so many ingredients, his world is so rich I feel richer every time I eat there! their service is also I have to mention unbelievable. Their wine girl (sorry I didn’t ask for her name) is fantastic! I actually never met anyone so passionate like her about wines and that makes her exceptionally professional and exceptionally good matching the wine to the dish/person. So many and much talent in this restaurant! I did 2 and 3 stars including Italy ones, New York ones also, and again, without a second thought, for me they are the best value for money ever. I actually asked for scissors from the waiter and cut 2 stars out of a piece of papers I had in my bag and gave it to their chef. This unbelievable talented guy so humble told me he would give it to the stuff they deserve it. How can u not fall In love. They...

Had a fabulous meal at Oak tonight…best dinner I have had in a while. Compared to Publiek & Heritage, where I ate earlier this week, Oak is just better across the board. Better food, better wine, better service, better everything. There is a family feeling to this place, with the chef helping to serve food where necessary, which is a really nice touch.

I had many excellent courses on the tasting menu but the best, for me, was the Gambero prawn, hammered into a thin circle and served on a tiny bed of delicious risotto…it was just MINDBLOWINGLY GOOD. This was one of the dishes that I forgot to take a photo of…as it looked so good, I had to eat it right away!

I also had the paired wines that were selected by a young lady who clearly knew her stuff…one of her “wines” was actually a delicious local beer. Everything was perfectly matched with dinner though…wished nailed the choices.

If you love food, you will love Oak. 100%...
