I was visiting the mountains and Calgary from Winnipeg a couple weeks ago, and being a home barista and coffee lover I made sure to stop in at Phil and Sebastian - I had heard lots of positive things about them.
Immediately i was impressed by their setup, which was indicative of a very high quality shop - WDT tools, a puqpress, etc... right away I got the impression these guys knew what they were talking about.
The barista (didn't catch his name, but longer, curly hair with glasses) was incredibly friendly and VERY knowledgeable. He was happy to have a little conversation about the brand and shop with me and explain what they were pulling for espresso. He then pulled me a VERY lovely shot (I think it was a Guatemalan origin) - very well balanced, reasonable acidity, with nice fruity flavours followed by a smooth, chocolatey, nutty finish. Absolutely lovely!
I had to get a bag to have at home, so the barista helped me pick one out - I am sipping a cup of it right now, and it is AMAZING. This place is truly incredible, it's everything a third wave roaster and shop should be - approachable, welcoming, friendly, knowledgeable, and most importantly - the coffee is AMAZING.
I eagerly await the day you decide to expand into Winnipeg ;) (but until then, I'll snag a bag of your coffee everytime someone in winnipeg carries it hahahaha.)

I got a few treats and some tea to-go.
I was amazed at the size of those donuts, even if they were ARE baked. They were like half the size of a regular donut. I guess that's why the store clerk said they're like "mini Hoopla," lol...
I liked the one with rainbow sprinkles. But the raspberry one was a mistake: it was dry and crusty. It was bad enough it was basically mummified when I got it, but I had a bite and had to spit it out. It was inedible. Needless to say, it obviously went into the compost...
I think the Snickerdoodle cookie was a little on the bland side. Good for the dinosaurs in this family, but for my sweet tooth: it did not suffice. So I only had half of it.
The mascarphone brownie was bitter sweet, I don't have an opinion on it.
The chamomile tea was soooooooo soothing and calming.
Yeah. I had 4 desserts in one night, then washed it all down with this floral tea...
The strawberry crumble muffin was good, I had it for breakfast the next day.
The scone I had was also good, I saved it for lunch the next day. I could have eaten it all. But I know it's full of butter and carbs, so I was nice enough to share...

Read moreI went here to grab coffee and a donut with a friend today at around 10:15 am and had the worst experience. First of all, their system was down, so they could only take cash or credit card, which is fine except they didn’t warn me until after I had put in my whole order. I happened to not have my credit card on hand and only had my debit card on me. The cashier gives me an impatient look and tells me to download the app and order through the app instead. My friend also asked her a simple question about their coffee, and she kept making a face as if she couldn’t be bothered to answer. After that, we sat near the bar and as I was trying to download the app, I overhear her telling her coworker, “who doesn’t have a credit card?” They kept snickering behind the bar. Mind you, we could fully hear them and they could see that we were there. I still put in the order and tipped them, but I’m just so disappointed because I actually do like their coffee but it seems that the employees at this location don’t care about their own customers.
