This was the perfect place to introduce oneself with Chilean cuisine. The lomitos melted in your mouth. It's mind-boggling that the slices of pork were cut so thinly and perfectly boiled. The meat wasn't overcooked and it retained a sweet flavor that wasn't too porky. All the sandwiches came with a heaping scoop of their housemade mayo, true to their culture. The Italiano is on the heavier side, with guac and a slice of tomato to cut through the richness. If you're looking for a bit more acidity to cut through the richness of the meat/mayo, then the completo with sauerkraut and tomato paste was perfection.
Despite the accolades, this place is unpretentious. You walk in and go up to the bar to place your order. Service is quick and very sanitary. They operate like a well-oiled machine. The portions are big by default. They DO NOT carry ketchup sauce, so please forget about it when ordering a sandwich. And to replace it they have a tomato sauce that is really good.
They make their own home made mayonnaise sauce too, which is thick and delicious, and most importantly, it is safe to eat, since there are uncooked eggs among the ingredients.
One thing that they haven't updated over the years is that even though you can pay your bill with Redcompra and credit card, you need to tip your waitress with CASH, and deposit it with a special ticket with you order in a particular wooden container inside the restaurant. The place is set up like a diner or soda fountain (hence the name), which I really liked. The service and food was not amazing, but it definitely felt authentic. I got a Churrasco sandwich, which was huge and very messy. I tried to eat it by picking it up, like a normal sandwich, but struggled. I noticed many locals eating it with a fork and knife, which was definitely the better option.
