Kamitora has one of the best Tonkotsu in Wan Chai. I would recommend trying their special set and the fried chicken.
The Tonkotsu special comes in with ramen, lean roast, pork belly roast, meat balls, an egg, and a few other toppings. The most memorable feature is their pork belly roast- its a very fatty cut, roasted and seasoned to perfection. The grease is flavorful and even have a sweetness to it, but not overbearing. It surely is a decadent treat.
The Tonkotsu broth is also top quality in Kamitora. It has a intense bone flavor. You can tell by tasting that the broth is a product of hours of simmering with tons of pork bone and that it's not being cut by MSG or miso unlike some other ramen shop in the area. I like the Tonkotsu with black garlic oil pairing the most- its aromatic, balanced and not overly salty. The original broth is also excellent. The shrimp and the spicy broth is a bit too salty/spicy that outshine the pork bone flavor.
Kamitora has the best Japanese fried chicken in the area. It's always freshly fried to order. The batter has a thickness to it that its very crispy but crumbly at the same time. The chicken is perfectly seasoned and tender. It's paired with a special mayo and fresh lemon. The portion is big- at least 4 big chunks at ~$50.

The speciality of this ramen place is the slow cooked pork belly, it's fatty and melts in your mouth. The soup base is rich and a little fatty because of the pork belly, but that's what makes it so yummy. Other dishes I enjoy are their fried chicken and spicy bean sprouts.
Please come hungry as the portions are sizable, if you have a midsized appetite you may not even be able to finish the bowl let alone get sides.
