charming family-run business with more than one absolute favorite dish.

don't get fooled by Google maps and beware to sit down at the tables in front of the restaurant, as they belong to the restaurant on the opposite side. the oyster bar is so brand new that they don't have outdoor seating (yet). Instead, you can opt for bar seats where you'll witness the family's skilled oyster shucking and careful selection process, whether they're served raw, fried or grilled. Alternatively, you can take your food "to go" and enjoy it on the restaurant's provided cushions on the stairs, just like the locals have done for centuries.

The oysters, sourced fresh multiple times a day from the family's farm in Ston, are creatively prepared and a must-try. We also indulged in the mouthwatering tuna tacos, a true delight. Watching the skilled cook and owner effortlessly prepare a continuous flow of meals in the compact kitchen was astonishing, and each dish seemed like an invitation to return. It was a common refrain that many patrons were returning customers, a sentiment we echo as we anticipate revisiting during our stay. (This holds significant weight as I typically avoid eating at the same place twice on a short vacation.)

Impressed by the excellent food and company, we extended our stay to savor the black risotto made following the owner's grandma's recipe. While we had hoped to sample the traditional stone cake, made by the owners mother, for dessert, it had unfortunately sold out – a testament to its delectable quality. The accompanying white pinot wine was both flavorful and refreshing.

so if you think .. yeah 5 stars, that sounds fishy ... it also tastes fishy - in a good sense. We would award 6 stars if possible. We recommend you to experience this exceptional establishment – just kindly wait until we depart, as we'd like to keep the ston-cake all...

Our experience at Edulis Oyster Bar was nothing short of exceptional, and much of that is thanks to the incredible service we received from Nicoletta. From the moment we sat down, she made us feel welcomed and taken care of. What really stood out was how thoroughly she explained every dish on the menu, along with the drinks. Nicoletta didn’t just rattle off a list of items; she took the time to describe the ingredients, the preparation, and even the local significance of each dish. Her recommendations were spot on, and it was clear she genuinely wanted us to enjoy our meal, not just take our order and move on.

What really set Edulis apart from the surrounding restaurants was this personalized touch. While other places seemed to be more focused on turning tables quickly, delivering food and drinks with little more than a nod, Nicoletta made our dining experience feel special. We never felt rushed, and her passion for the food and drink she was serving was contagious. The food itself was spectacular—fresh, flavorful, and perfectly prepared. Thanks to Nicoletta’s thoughtful suggestions, we were able to enjoy a true taste of Dubrovnik, savoring every bite.

This restaurant deserves so much more recognition. It’s a place where you don’t just eat, but truly experience the local culture through its cuisine. Yesterday we enjoyed Edulis Oyster bar in the old city of Dubrovnik, Croatia! We met Daniel and Antonio who were the visionaries and entrepreneurs of this beautiful restaurant! These are the freshest oysters I have ever experienced. Antonio’s family has been caring for an oyster farm for multiple generations. He drives 50 KM each morning to facilitate these fresh oysters. We learned of his family history, the oyster farm, and the time from seedlings to plating these delicate, delicious, flavorful morsels. As the restaurant waits to get the permit approval for the outdoor seating from UNESCO, as their restaurant dwells within a UNESCO protected building. Daniel shared the history of all the dated stairs outside where we were able to enjoy our lunch. He said throughout history many people have sat on these stairs to enjoying taking their coffee in the morning and eating cuisine from the local restaurants and has been the meeting place for locals for generations! Lastly, Antonio’s mother sent this Ston cake into the restaurant for others to enjoy a historical and local dessert that is unique to this region which is...

Easily the best food I had in Dubrovnik (and in my top three restaurants I've encountered in Croatia as a whole). I ate there twice: classic oysters on the half shell one night, and AMAZING black risotto the next (seriously–after a month in Croatia, I've had a lot of cuttlefish ink rice, and this one left all the others in the dust). The family that owns (and staffs) Edulis have been oyster farmers for four generations; Nikoleta (behind the counter) can give you their fascinating story. She (and her husband, working his magic at the stove and grilltop) are passionate about their food, the wines they offer, and their heritage. Since the setting is quite intimate (just six stools at a counter), you get to interact with them a lot, which made each evening even more special. You'll walk away with a very happy stomach and the feeling you've just made some new friends. Pro tip: have Nikoleta choose your wine. Her suggestions were spot on, locally sourced, and paired perfectly with the dishes.
