Hands down, this is the easiest 5/5 I have ever given. Rous is a true gem in Nicosia, delivering a fine dining experience that is both refined and deeply rooted in Cypriot tradition. Every dish is meticulously structured, with attention given to the finest details, transforming each bite into a journey through the rich flavors of Cyprus. The chef's goal of elevating traditional Cypriot cuisine is not only achieved but masterfully executed.
The atmosphere at Rous is warm and inviting, with a vibrant yet intimate ambiance that enhances the dining experience. We had the privilege of sitting at the chef's table, allowing us to witness the kitchen in full action. Observing the passion, precision, and dedication of the team was a highlight of the evening. The organization and effort that go into every dish are truly admirable.
The Culinary Experience:
Amuse-bouche Trilogy: Beetroot salad | Spicy trout on kolokasi crisp | Pomme soufflé with tarama. This was the perfect way to start the dinner, setting the tone for what was to come.
Housemade Bread Selection: Sourdough Baguette | Malted Rye & Wholegrain Roll with Tahini Molasses Seeds | Carob Glazed Lagana Bread, served with homemade cultured butter. The butter was, quite possibly, the best I have ever had—so full of flavor and richness.
Seafood Dolma: A beautifully balanced dish of octopus, mussels, Cypriot shrimps, and fish avgolemono. For seafood lovers, this is a must-try, as it delivers an explosion of oceanic flavors.
Louvana Soup: Foie gras parfait | Flaxseeds | Mandarin gel | Pink peppercorns | Hiromeri | Wild mushrooms. This dish transported me straight to Cyprus, with its deep flavors and luxurious texture.
Cypriot White Shrimp Yakitori: Lamb fat | Butternut squash textures | Kolokasi | Caramelized apple gel | Curry leaf sauce. An incredibly creative dish, with the lamb fat adding a souvla-like flavor that paired wonderfully with the shrimp.
Rabbit Pastitsio Ravioli Doppi: Rabbit ragù | Halloumi bechamel | Black truffle emulsion | Roasted yeast emulsion. One of my absolute favorites. The pasta was cooked to perfection, and the halloumi bechamel was outstanding. I found myself wishing for just one more ravioli!
Beef Cheeks: Kolokasi foam with impeccable texture | Stifado jus | Shallot crumb. Another standout main dish, with the beef cheeks melting in the mouth, perfectly complemented by the intensely flavorful stifado jus.
Rice Pudding: 'Oros Maxaira' Honey | Bee pollen | Crispy milk froth | Anari cream. Easily one of the best desserts I have had in a restaurant. I couldn't get enough, and the chef was generous enough to offer us a refill!
Morokanella Sour Candy: A playful, creative, and delightful ending to an already exceptional meal.
Another highlight of the night was the exceptional service. The staff at Rous are not only friendly and attentive but also incredibly knowledgeable about the ingredients and dishes they serve. Each course was presented with care and detailed explanations, enhancing the overall experience.
Rous sets the bar high for fine dining in Nicosia. The quality of ingredients is top-notch, and the chef’s creativity shines through in every dish. It is evident that he has a deep love for Cypriot cuisine and an extraordinary ability to showcase it in the most elegant and flavorful way possible. With a menu that changes regularly, I will definitely be returning to explore the new creations.

The food is tasty, looks amazing, and it is very obvious that there is high technique in achieving each of the dishes like for example the ravioli with the runny eggs yolk inside. Same goes for all dishes
So the food was very tasty but the technique that went into it was more amazing
We ordered wine in a glass. We do this often in restaurants. The quantity they put in the glass was far too little. That is a minus and there ja no excuse for it.
The staff were very professional, smiling and helping and took the time to explain everything, and you could tell they were doing their absolute best
If I would change something ... I would make the service more casual and less uptight and formal. Yes, quick service is very important, but having someone almost on top of you constantly, like a French style posh restaurant treating you like a lord, for me it's a bit too much ... but this is a matter of taste. And I suppose the owner wanted to give a somewhat posh high...
Read moreIt's a nice restaurant with an amazing ambience the details of the set up on the table have a very nice aesthetic and the service was exquisite... we were warmly welcomed by the owner and the stuff...the waiters were extremely polite and the food was on point timewise...now the food was tasty besides a couple of things that need a bit more thought... what I'd definitely recommend is the Tarama as a welcome course with the amazing bread and the beef cheeks as a main course which were my favourite in the meal and probably some of the best beef cheeks I ve tried...there were also choices for vegetarians and a special dish of the day that was extra from the menu which was the cauliflower steak which was incredible and my girlfriend really enjoyed it and so did I... would definitely come back and recommend it to anyone that visits nicosia and want to have an enjoyable dinner or for a special occasion!
