I visited Fabro yesterday, hoping for a great experience, but unfortunately, it didn’t quite live up to the hype.
The waiting list system is one of the biggest drawbacks. We wrote our names down at 17:30 and didn’t get a table until 19:30. Since they don’t take reservations, you have to be physically present when your name is called, which means constantly checking the list outside—even in freezing weather. This setup feels outdated and impractical, especially when people can easily manipulate the list by squeezing their names in between others. A proper reservation system would make the experience much smoother and more respectful to guests.
When we finally got seated, it wasn’t even in the main dining area but in the bar next door, which had a completely different atmosphere. The constant foot traffic from people coming in and out made it far less enjoyable.
Service was inconsistent. Our waiter was friendly but got distracted when guests from his home country arrived, spending more time chatting with them than checking on us. We ordered focaccia as an antipasti and two pasta dishes. We waited a long time for our food, and when the pasta finally arrived, we mentioned that we had also ordered focaccia. Instead of an apology, they simply brought it out as if it was always meant to come with the pasta, which wasn’t the case.
On a positive note, the pasta was delicious, but it wasn’t worth the long wait or the inconsistent service. I used to love Fabro when it was less hyped, but now that it's become so popular, it feels like they’ve prioritized the "cool factor" over a smooth dining experience. Read moreI decided to visit Fabro on my last night in cph. I had been super lucky with no lines anywhere all trip so decided to wait. I waited about 40 min which wasn’t too bad. You have to stand on the corner in order to hear your name be called. They let you also get drinks next door (they no longer let you hang out there as they use it as extra seating since it’s so busy.)
The waiters were nice and you could tell they were doing their best. I wouldn’t be expecting extremely exceptional attentive service but they did a decent job with the circumstances.
I was actually seated in the “bar” area that used to be used to for the waiting queue. It was actually a good vibe.
The only white they offer is a pinot grigio so I passed. I ordered the gassosa italian soda and it was tasty & came in a substantial bottle. Btw tap water is 15 kr a person so bring your water bottles!
I got the carbonara as I do love a good carbonara. It was good, definitely heavy on the pepper. I think my issue was that it didn’t taste like homemade pasta, which I’m not even sure if it even is because they aren’t advertising that it is. I just didn’t really understand why there was so much hype for this pasta if it tasted like box pasta.

Read moreArrived at 6:45pm on a Saturday and were told it would be a little over an hour's wait for a group of 2, so we put our name down and waited in their little bar next door. It was very busy with standing room only, and the only places to sit while waiting were outside, but being February it was a bit cold. Other groups went elsewhere for a drink and were seated quickly when they came back though, so that might be an option if you're going to be waiting a while.
We were seated after about an hour (👍) sharing a circular table with two other groups. The bread and olives were delicious, as was the pasta, which was fresh and al dente. I had the duck ragu and the meat was phenomenal. The prices were also very reasonable for Copenhagen. We were moved to another table halfway through eating our main course because of an arrival of a group of 8, and given a shot of limoncello to compensate.
The atmosphere was fun and eclectic, and the service was good, particularly the communication when waiting for the table, although the staff seemed overall a bit stretched thin, and having to move tables halfway through eating was disappointing after waiting for the table.
If you're looking for delicious pasta and don't mind indulging some trendy modern restaurant aspects then I recommend Fabro, probably even more so in summer when outside seating is more viable, but maybe...
