Whatever POPL is trying, this is not how you elevate burgers. As countless before have commented, price is outrageous. Denmark is expensive, this is par for course and then some. What I struggle with is value. The POPL burgers are, much like the menu, and despite all their efforts to make it appear not so, plain. Very plain. Not simple. The simple can still and often is sublime. The plain, not. I came here with a group high on expectations given the established esteem for Danish beef and general culinary scene. I was deeply disappointed. I had a Cheeseburger. I refuse to eat deer and was put off the prospect of heaviness that the deep fried, battered fish piece topped with hollandaise in a brioche buns suggested - that excess in cholesterol shouldn't really be for anyone - and they just so happened to be out of the vegetarian mushroom sandwich. The Cheeseburger came with a slice of cheese, two slim rings of red onion topped with a very basic ketchup and mustard melange - the kind any child could whip up in sheer playfulness. No tomato. No bacon. No lettuce. No option to add any either. I'm no stranger to this simpler approach to the cheeseburger, living in Ireland for the greater part of the last decade and, in fact, I even favor it. Remove the “contaminants”, put the focus solely on the quality and care toward the beef. There is a profound respect that is given to the dish, the meat, the animal. I was fooled to think this was POPL’s intent. In hindsight, their take on the cheeseburger, as the entirety of their menu, is just an exercise in annoying pretense. Much to my dismay, unlike high establishments that sincerely put unique focus on the experience of their meats, they took orders without once asking for cooking preferences or temperatures. I dismissed it as oversight at first - but for it to happen 6 times isn’t neglect or forgetfulness. How was it? Mediocre. The meat and toppings were ok - just that. The brioche was nauseating and tasted as if it wasn’t just fried or basted but boiled in butter. I felt sick within an hour eating it. What about the rest? The fries were nicely seasoned but clearly frozen. That's unacceptable as a separately paid item and especially when adding to a burger that alone is €33 euro. It's bordering on the insulting. We tried one of all the other sides and they were ok too. Again, nothing wowed us. The one with asparagus and caviar is a joke at which I audibly giggled after my first taste. The coffee-centric Armadillo cocktail was unimpressive and I passed up on the opportunity to have another at final call. I invite the esteemed Michelin-starred chef René (whose name is partly reflected in this restaurant) to show himself in his establishment. I tried all three sandwiches on the menu the whole point of this project and here are my conclusions. If he realizes that you’re serving poorly crafted, tasteless food and decides to change the menu, he might just regain the respect of someone who has actually dined at real starred restaurants. But if this is also the quality of Noma, then I understand the power of money—paying off Michelin judges and a few influencers for publicity won’t take you far. This place is a disgrace to good food! Before cooking, ask yourselves: "Is what I’m about to serve actually good, or just some insane experiment with unbalanced, offensive flavors?" I can’t even comment on the quality (which should be high), because for €40 a burger, the chef should at least come out and thank you for being naïve enough to pay that much for something that McDonald’s would have done better! Cheeseburger: Decently cooked meat, diced onions, and supermarket-grade cheddar. Then comes the "burger sauce”—I don’t even want to know what’s in it, I just want it gone, because it turns everything acidic to the extreme, overpowering every other flavor. How do you not taste your own food before serving it? Guys, this is supposed to be fine dining! Shame on you.
Lion’s Mane Mushroom Sandwich: First of all, if you call it a sandwich, don’t serve it on the same bun as the burger. That alone speaks volumes about the lack of care. Completely unbalanced flavors I couldn’t even tell what I was eating, because there was no personality, just another acidic overload from that "forest pesto sauce"ruining every single bite. Call it a sandwich, a burger, whatever you want…it’s inedible.
Chefs and staff, if I were you, I’d be ashamed to work in a place like this. As a fellow cook, I’m telling you: you’re an embarrassment to the kitchen. Even a child would know that what you’re serving doesn’t deserve to be called a "dish."

A few days before we had a slight issue with our booking time and inquired about possible adjustments.
Christian, who was at the door, responded with a dismissive attitude, saying, “This is a restaurant and we have a system; we can’t just change the rhythm of things for you.” His tone was not only arrogant but also made us feel as if we were an inconvenience rather than valued guests.
Despite calling ahead to notify them of our slight delay (8 minutes), Christian informed us over the phone that we wouldn’t be allowed any dessert.
This preemptive decision, conveyed in a brusque manner, was unnecessary and unfriendly. After being rushed to our table, we were then neglected for 15 minutes before anyone came to take our order. The waiter, when he did arrive, seemed hurried and stressed, adding to the already tense atmosphere.
The situation escalated when Christian decided to remove an extra chair from our table without asking - he simply announced he would be doing so already moving our things aside - to accommodate another group, directly contradicting his earlier refusal to make similar adjustments for us.
Service continued to decline; requests for basic items like napkins or a soda were met with curt and almost hostile responses. For instance, when an asparagus dish was served without plates, and after several minutes of waiting, I caught Christian's attention to ask for plates. His reply was sharp and dismissive: “In 2 minutes you will get plates and cutlery with your burger!”
The culmination of this poor experience was at 7:08 PM, when our menus were abruptly taken away and we were told to vacate the table because a family was waiting. Despite our reservation being until 7:15 PM, we were rushed out with no option for dessert unless we chose to stand in another section of the restaurant.
The service at Popl Burger was not just disappointing but frankly unacceptable. It was characterized by arrogance and a clear disregard for guest experience.
