First impression is a cosy basement space (with no noted unpleasant odors as some have mentioned), evenly spaced seating and good acoustic - not the Copenhagen-brand "intimate" spacing which means you're staring people in the face as they sit next to you and everyone is shouting over their food to be heard by their partners. We recognized the only (very busy but very polite and calm) server from a previous visit, and he introduced himself as the owner. The first dish was three separate crunchy delicacies that were definitely worth the difference already between the 8- and the 6-course! I was hooked. We proceeded to lose track of all time and place as tasty dishes came with 15 minute precise gaps and proper introductions. We ordered the sake mojito and were impressed at the kitchen's skill in bringing out the best flavors of sake with this refreshing drink. Each dish brought familiar flavor and skill from Asia but with plenty of European and Nordic inspiration. It's an interesting fusion-style kitchen and therefore quite unique. Personally, it feels to me more like a western/French-style kitchen with a Japanese "touch" than a Japanese-style kitchen "with a Nordic twist". Flavors surely reflect that; there are no soy-heavy or wasabi-dominated dishes. But you do get very well-balanced offerings that (for the 8-course menu) has more hits than misses. The whole ordeal took around 1,5 hours, which is quite manageable especially when seated in the comfy chairs they've got.
The wine pairing is good, albeit not impressive. In general, there aren't any Michelin stars being handed out here, but the quality is quite high. You get a very well assorted selection of fish, shrimp and meat at a decent price.
