After arriving in Copenhagen just yesterday, I immediately checked the Happy Cow app. I was thrilled when it pointed me in the direction of Vital Foods. I rented a bicycle from my hostel and I was on my way over there as soon as it opened up. My immediate impression was that it was a beautiful layout. A simple yet attractive space, that intrigues as it pleases the eye. A conversation erupted between the gentleman behind the counter and myself. At the time, I did not know it but Aleksander is one of the cofounders/coowners of the restaurant. I knew the food would be delicious, because of how warm and friendly he was. It was apparent that he clearly was here because he loved providing, delicious vegan food to the people of Copenhagen. I later learned that his partner in the kitchen(Frederik) was the other cofounder.
After a few minutes I decided to order two items: The Black bean burrito and the Green Oatmeal. Given the reasonable prices, and the fact that I knew I would be bicycling a lot today, I figured it best to have a hefty breakfast.
While I waited for these two dishes, I took a seat by the window and continued to have a pleasant exchange with Alekzandr. We discussed both of our countries, my trip thus far and where I would go next.
While the burrito was being prepared, Alekxandar brought me my oatmeal. Upon the first bite, I was transported to another dimension, where oatmeal is as it should be. The combination of the kiwi, spirulina and maple syrup brought a delicious flavour to my mouth. The consistency was perfect.
Just when I thought, my meal was complete the burrito arrived. This too felt like it had been delivered from another plane. In less than no time, the salsa was applied and the first bite was taken. Time stopped, as I chewed the rice, beans and vegetables. It was just me and the burrito. No one else noticed, because they were frozen. I savoured these moments as I may never have the entire universe to myself again.
After finishing my meal, I promised Ahlyksander that I would return tomorrow to try the chickpea sandwich. This was a promise that I believed I would keep. It is a promise I will break. Tomorrow I am heading to Gothenburg at 7:30 AM. Aleksander and Frederik, thank you for the delicious meal. I am sorry that I won't be back.

I stumbled in the other day needing a cup of coffee, and to my delight they had multiple alternate milk options at no cost, which is the first I’ve experienced of no addtl cost around Copenhagen. On top of that, the coffee drinks were extremely reasonably priced even in the middle of tourist-central Copenhagen. I came back a day or two later for a burrito, and boy was I delighted. Both times I entered the cafe, staff were warm and calmly working hard, no matter how busy it was. And the cafe is clean, including bathrooms, a real relief. But the burrito, excellent. I got the minced mushroom burrito and it reminded me vividly of eating a ground-beef burrito from Taco Bell
Read moreThis is a stellar example of plant based food done superbly, stylishly, but without any pretense. The lovely menu has clearly been carefully thought out- there are varied options but not too many, and everything we tried- spanning wraps and sandwiches- was absolutely wonderful. Fresh, well made and with amazing layers of flavour in each bite! The space itself is very clean and minimalistic with sweet and unique touches- and as a huge plus there is an adorable little outdoor seating area in the back with lots of greenery. It’s lovely and quiet there and makes for an amazing respite for a delicious lunch!
