Simon was an absolutely fantastic host for our tasting — warm, knowledgeable, and passionate about Champagne. We began with a brief and engaging refresher on the Champagne production process, which set the stage beautifully for what followed: a guided tasting of both blended (assemblage) and single-varietal Champagnes (100% Chardonnay, Meunier, and Pinot Noir), each from different Récoltants-Manipulants (RM) who are part of the exclusive 24-member club.
The bar itself is one-of-a-kind — a brilliant concept brought to life. A detailed Champagne map is laid out across the floor, clearly marking the locations of the 24 exceptional growers featured. Even more impressively, bottles are suspended from the ceiling, and each one includes detailed descriptions of the growers they represent, creating an immersive and educational experience that feels both high-end and deeply personal.

We called 30 mins before close and they were gracious and warm to let us quickly do a tasting. We ordered a bottle - the guy (very friendly and helpful) who rang us up asked what seemed to the manager for one of the empty boxes he was taking to the trash to keep our bottle secure. The manager hesitated and had to be asked twice for the box. Then we asked for a bag - the manager swiftly responded it’s $8. We previously watched another (white) couple be offered a bag for free by the same manager.

But for connoisseurs and enthusiasts just wanting more variety, this shop run by an association of 27+ independent grower Champagne estates, just cannot be beat. You'll be able to purchase bottles (and cases) of bottlings seldom seen back home, and more importantly be able to taste maybe 6-9 open bottles among 180+ cuvees they carry at any given point. It's a great opportunity to learn a lot about different cuvee styles and the growers behind them, some of whom have an intense cult following among enthusiasts.
All at reasonable prices and among super-friendly staff, the shop space is totally lovely too.
