I’m Vietnamese and happened to come to Aachen this week with my friend. We ordered Pho Bo & Bun Bo. It was good in first 1-2 spoons cuz we were hungry & the weather was cold. But to me, this is not authentic pho bo & bun bo. For Bun bo, most regions would use different kind of bigger rice noodle, which I think it more match with the soup. We also use different parts of beef in this soup. We don’t put beef ball inside Bun bo. My friend must ask for fresh chilli. Usually they must serve it from the beginning and customers don’t need to ask for it. They didn’t have special vegetables like saw leaves or coriander either. There’s also no soybean paste.
