Pizza expert/nerd/geek here (poolish, 4 day ferments, san marzano, all that jazz).
We’ve travelled all over Italy, NYC and further afield trying the “best” pizza. This place is up there with one of the best pizzas I have ever had.
The crust is perfectly hydrated to give a crisp but light and fluffy base (take note NYC, it’s crisp NOT crispy!). It is then topped with an amazing tomato sauce which is either San marzano or something even better. The balance of acidity, saltiness and tang is just right.
