I came to Italy LOOKING for a place that served tripe and other organ meats cold (I would drool over an instagram account I found in South Italy so I was already depressed knowing I wouldn't be going as my itinerary is focused on North Italy) so when I saw this place my first thought was where's my wallet.

The man (possibly owner) working was extremely friendly and even accomodated my request of adding specific cuts to the cold cut platter I ordered which he didn't need to do but did with a smile and classic Italian hospitality.

Cold cut platter: this was just divine. As someone who loves tendons, tripes, and other organ meats, this was right up my alley. Maybe there was some bias due to my love for it and also my eagerness to try it after seeing it on Instagram for months before visiting, but this truly hit the spot. Salt, lemon, and pesto on it.. chefs kiss. Basic and delicious trippa alla florentina (in a bun): was VERY good but a restaurant in Rome stole my heart so I have to give this a close second. Tripe was cooked very soft and sauce was hearty and sweet. I even added bits from my cold cuts into this and the taste and textures took it to the next level for me.

Thank god I'm only on my 2nd day out of 6 in Florence so I know I have 4 more days of stopping by here. (Hoping my love for the Rome spot doesn't affect my portions :p)

Gave a 5 rating for atmosphere soley because of how welcoming the employee was as well as how clean and nicely setup the shop was. We however got our food and took it upstairs to eat.

Total for the platter and sandwich was $11.50euros

*BONUS POINTS FOR HAVING THEIR MENU TRANSLATED IN CHINESE. I'm Chinese but can't read or write so it doesn't affect me, but I could always appreciate a store going above and beyond...

Bambi Trippa e Lampredotto at Mercato Centrale in Florence is an absolute gem for anyone seeking authentic, traditional Florentine dishes. I had the pleasure of trying their Lampredotto and Insalata del Trippaio during lunch, and the flavors were out of this world. The mix of beef tongue, tripe, and beef uterus in the Insalata del Trippaio was surprisingly delicious.

I am already looking forward to going back for dinner to explore more of their phenomenal dishes. Chris and Jonny provided exceptional customer service, going above and beyond to make our experience memorable. Their explanation of the spot's history added an extra layer to the dining experience.

I cannot recommend Bambi Trippa e Lampredotto highly enough. If you're in Florence, this is a must-visit destination for a taste of true Florentine cuisine. I rate it...

Chi vive a Firenze non può non conoscere Bambi, cognome da sempre legato alla lavorazione delle frattaglie e per questo anche alla evoluzione urbanistica della città. Ho sempre trovato il loro Banco presso il Mercato Centrale molto bello e curato, così moderno ma allo stesso tempo tradizionale, ma questo mi ha reso anche un po' dubbioso riguardo al prodotto offerto, creandomi il pregiudizio che le nuove generazioni avessero dato più importanza all'immagine che alla sostanza; ieri ho voluto fugare ogni dubbio, vedendo tra i panini del giorno quello con la Lingua, ed oltre a questo ne ho preso anche uno con Lampredotto. Nell'attesa della preparazione ci si perde tra le frattaglie ed i tanti tagli disponibili, oltre alle varie pietanze proposte ai clienti, una più invitante dell'altra. Una volta a casa ho subito voluto assaggiare il panino con la Lingua, taglio che mi ha spinto a provarlo, ma sono rimasto scioccato da quello con il Lampredotto; nella mia vita ne avrò mangiati un centinaio ma mai ne avevo trovato uno così gustoso senza avere un sapore "forte", tipico delle frattaglie, con una consistenza tanto morbida che definirei quasi "cremosa", così ricco di grassi che esaltano ancor di più il brodo in cui sono disciolti. Oggi sono passato nuovamente per comprarne una vaschetta, tanto ero curioso di riassaggiarlo e carpirne le peculiarità; parlando con il ragazzo al bancone, complimentandomi per i prodotti che offrono, mi è stato spiegato che in città sono loro che lavorano la materia prima e la rivendono poi a molti dei trippai più famosi, potendo così selezionare per se stessi i tagli più freschi e pregiati.
