Stumbled across this lovely restaurant my first night in Firenze. From the moment I was seated, I was treated to a first class experience: Both waiters were incredibly attentive and kind and the food was excellent, the quality I have been searching for during my trip to Italy. I began the meal with a complimentary half-glass of prosecco and snacks. The focaccia provided with my meal was warm and delicious, with a smoky salt that impressed. The food I actually paid for followed this trend! A subtle mushroom ravioli dish for my primi, followed by probably the best dish I’ve had in Italy — a guinea fowl, layered with prosciutto and pistachio, served with grilled vegetables. I was so full half-way through but finished it all because it was so delectable. The chianti my waitress recommended was fantastic and paired well with my food. The total came to a little over 40 euro, very affordable by the New York-standard I am used to.
This really was the standout meal of my trip so far! If you are looking for a guaranteed hit, the type of Italian dinner that this country is famous for, I would really recommend coming to Ribeo! The service was superlative — attentive but not overbearing — which is something I have learned is not always the case here. Service was excellent and attentive without being overbearing. We had water, wine, shared a salad (not on the menu, a special item for the day), and each had a dish. Everything was fresh, delicious and perfectly prepared.
The highlight was the octopus shrimp salad. The octopus was grilled / charred, tender and flavorful. The rest of the salad ingredients balanced each other splendidly. This was the best thing we ate during our whole week in Italy. Ingredients included: octopus, shrimp, strawberry puree, mango and pineapple slivers, mixed lettuce greens, celeriac and cucumber ribbons, cherry tomatoes plus a light vinegar and oil dressing. I had ricotta and spinach gnudi dumplings with bacon and my husband had a pasta dish with shrimp and truffle.
We also had a snack of crispy wafers, sharp firm cheese and delicious soft sun dried tomatoes in tasty oil.

The octopus starter is awesome. Really goes well with whatever that came with it. The flavours come together well enough without overpowering the octopus.
Next star is the beef cheek and potato souffle. Both executed really well. Beef cheek was really tender and flavourful. The souffle makes it interesting.
The pasta we ordered was gnocchi with pumpkin and something else. This dish was my least favourite for this dinner. Generally, pasta has been too salty for me in Italy, this was the same. You might like it but after spending few days in rome, salty pasta is really...
