I also know the cost of raw materials and the current market context, so at no point was my criticism about the price of the coffee. I know exactly what a flat white is, how it should taste, and how it should be balanced.
The issue was not the price, but the execution. My criticism is that the espresso you served was unbalanced and had notes of bitterness that it should not have. And yes, I can perfectly differentiate bitterness from acidity because that is part of my professional training. This is not about me misunderstanding the product, but about you needing to be self-critical enough to acknowledge when something is off.
Your response reflects a combination of arrogance and condescension towards a customer who simply gave feedback based on facts and professional experience. You treated me as if I were ignorant, when ironically, I am qualified to evaluate what you offer. If, as you say, your café is important because it supports 14 families, then you should consider that accepting criticism with humility and working to improve the customer experience is far more productive than attacking or questioning those who leave negative reviews.
Finally, regarding the bathroom: I wasn’t complaining about the toilet lid being up. I was complaining about the fact that there was no seat to sit on, which I find unacceptable in an establishment that aims to project an image of quality and professionalism.
In summary, my intention was not to attack or question your business concept, but to share a real experience in the hopes that you could improve it. If we had been informed ahead of time that it would take so long, we would have been more understanding. However, the place was only about half full, and they seemed extremely unorganized. They could really benefit from a better POS and ordering system to improve communication and efficiency.
As for the food, it was overall fine. We ordered avocado toasts, juices, and a cortado. The coffee beans they used were clearly dark roasted, which was quite noticeable in the taste, but their machine could use some cleaning as I found coffee grounds in my cup.
