Ambiente molto carino immerso nel magnifico centro di Trastevere. Cucina così e così a dire il vero niente di eccezionale rispetto a tante altre trattorie del centro dove la tipica cucina romana la fa da padrona. Di amatriciana ne ho mangiato molto meglio e il secondo erano 8 fettine (tagliate a salame) di carne rossa beef e porzioni minime mentre il dolce era molto buono. Il personale è molto gentile cordiale e intrattenitore come dovrebbe essere quello di una buona trattoria romana che si rispetti. I prezzi decisamente alti, capisco che stiamo al centro di Roma ma di controparte "me devi da magna". Diciamo che il ristorante non è per i romani locali ma più per persone che vengono da fuori.

P.S.: Rispondo alla risposta del proprietario nel commento sotto. Innanzitutto dimmi chi sono? Quello del tavolo degli 8 o quelli dei 4? Perchè hai cambiato più volte versione (ed ho gli screenshoot di entrambi se vuoi li metto tra le foto). Inoltre come ti permetti di dire e raccontare chi ha pagato quella sera e raccontare particolari di persone che non sei nemmeno sicuro chi fossero? Come ti permetti di dire cosa devono mangiare e cosa bere? E quanto riguarda me e la critica alla mie recensioni sono felice che tu l'abbia lette perchè così sai che ci sono persone che non mettono 5 stelle solo per farvi contenti e non dare un servizio di informazione che potrebbe essere utile per tutti quelli che leggono. Ho raccontato soltanto la verità sotto il mio punto di vista (e sono stato pure gentile) mentre con la tua risposta ti sei dimostrato poco serio e non rispettoso verso un cliente che ha solo espresso una sua opinione e saranno gli altri a valutare la quella opinione anche in base alla credibilità dello stesso. Rispondete in merito non "ma tu sei quello, tu hai fatto tu hai pagato". La verità è che ristoratori come voi (che avete scritto la risposta) devono accettare anche la critica degli altri e non screditare chi le fa solamente perchè volete conservare la vostra reputazione.

PS: di nuovo una citazione al proprietario (non mi è mai capitato ma evidentemente lui proprio non accetta le critiche). Ovviamente ho fatto di nuovo screenshot così non cambia di nuovo versione come ha fatto già una volta. Il proprietario di questo locale insiste sul fattore denaro e sulla critica in generale che gli si fa. Il punto fondamentale per lui è quanto ho pagato che tra l'altro erano 160€ circa e scontato poi a 145€ per 4 persone con 2 primi e 2 secondi non a testa ma in totale più amaro e vino come già critto e vi sembra poco? Lui fa conti alla mano e dice che a Trastevere sono i prezzi base. Bene una delle cose che lui non considera e che se per me la matriciana o un qualsiasi primo non mi piace (a meno che non mi voglia dettare anche i miei gusti) per me è tanto anche 7€ e l'abbiamo pagato invece prezzo di "Trastevere" e ho semplicemente detto che ne ho mangiate di meglio. Il roost penso che si vede in foto come è fatto e chi vuole vedere della comunità si fa la sua opinione. Io sono stato "magnanimo" e ti ho dato 3 stellette mio caro proprietario "degli specialisti" perchè te lo meriti. Ho mangiato in altre trattorie molto meglio allo stesso prezzo o inferiori a quelli tuoi. La cosa che da più fastidio di te (proprietario) è che non rispondi sulla qualità del tuo cibo (mediocre) ma vai a scrivere fatti privati di come ad es chi ha pagato tra noi clienti e quanto andando a marcare questo fatto perchè evidentemente non hai altri argomenti di discussione e vuoi fare apparire il cliente come un accattone o poco credibile. Ma questo non fa altro che constatare quanto tu sia innanzitutto una persona poco seria e poi come non accetti la critica. Mi stai tirando in ballo perchè non ti piace la critica. E perchè non ti piace la critica? perchè hai paura di perdere soldi, se è come dici tu e hai tutte queste recensioni positive perchè ti affretti a ribattere alle risposte di un solo utente andando a leggere anche le sue altre recensioni? I am Italian, I have family in Rome but had not come in many years. I was disappointed to see that the majority of restaurants, even the historical ones, adapted their food to the floods of mediocre tourists that come here, especially Americans expecting to find the same steroids inflated meet and GMO vegetables they find at home or the greasy salty and sauce and cheese filled pizza they make. The only poor reviews are from these people. This is Italy: the country of authentic ingredients and cooking mastery. Gli specialisti maintains that and it’s finally the first authentic restaurant I found in days going around Rome. L’amatriciana was the best I ate in years: tomato sauce cooked to perfection, guanciale crispy and super yummy, the fiori di zucca were super tasty. Someone talked about them being greasy and made in old oil, I don’t know what they are talking about, they were great. My partner ordered state of the art ravioli and great polpette. Finally the service was in the Roman style: caciarone at the right point and super friendly and hospitable. I’d definitely come back and I’d recommend it to anyone who’s really interested in tasting authentic Roman cuisine and opening their mind to the real Italian local culture. 100...

You can truly taste the difference no matter how good your Mama's is, true Italian pasta is better 🤤 I asked what his favorite dish was & he brought me pig cheeks... honestly I never would have ordered it myself but it was heavenly! The girls had carbonara & ragu that was just as yummy but the wine helped turn all the dishes up a notch! The day was gorgeous so we opted for one of their 2 outdoor patios but there was indoor seating available too. They were in a little alcove that if you were walking along the street you'd miss them as well as several other shops & eateries so make sure to "get lost" on occasion & wander off the beaten path!

The restaurant is owned by the family (as most in Italy are) & they just ooze passion for their craft! The brother answered all our questions about local customs & political interests & was just very friendly even when we had opposite opinions (my favorite kind of chats!)

Also learned that this was the place to be for the younger crowd/nightlife! Sadly it was our last night & we still had another tour to do so it means we'll have to go back to sample their wires again...

100% recommend this place for everybody! the service was really nice and helpful, you felt that they were taking care of you all the time almost like a family! I chose ravioli and my friend chose carbonara, and these were the BEST ravioli I've ever ate in my life — must try! perfect balance of flavors, perfect amount, and perfect texture. carbonara was also really good. at the end we chose two bruschettas and they were alright, though a little bit too dry and there are probably better food to choose in their restaurant:) they have a bigggg selection of vines and even though we chose a classic chardonnay, it's probably worth to try the other ones they have. overall really enjoyed this place, probably going to come back here next time in Rome (especially since the localisation is so nice too) thanks a lot for a great experience:)

Then they charged the €2 coperta - even though they never brought any bread. When I complained, they claimed that "in Rome, coperta doesn't Include bread"! 🤣🤣 Completely false. I come to Rome several times a year and EVERY other restaurant Includes the bread. Ridiculous (see photo from another restaurant nearby). Avoid!!! Yes, I am talking about Gli Specialisti in Trastevere. I was there today. A photo of the zucchini flower made in stale oil now attached. Talk to the bearded waiter who waited on me and told me bread is paid separately!

Stay away! Awful zucchini flowers (greasy and, worse, in old oil). Specialists only in ripping off tourists. First they "doubled" my order (2 zucchinis and 2 artichokes, when I ordered 1 each). Then they charged the €2 coperta - even though they never brought any bread. When I complained, they claimed that "in Rome, coperta doesn't Include bread"! 🤣🤣 Completely false. I come to Rome several times a year and EVERY other restaurant Includes the bread. Ridiculous (see photo from another restaurant nearby). Avoid!!!
