I own a restaurant in the tourist capital of the world (New York) and every customer gets treated the same and charged the same.
Some places in Rome are like this. Some are the opposite.
SORBILLO is one. First off, the pizza is average. I have had better wood fire pizza at multiple places on LONG ISLAND, let alone Manhattan.
So if this is on your list for your search of that, keep away.
They sneakily charge a 3 euro “service tax” for every seat that gets used up. They even charge for a 9 year old to sit down as well. And when I asked what it was, the old blonde lady at the register just looked at me nasty and had a mental breakdown that I even thought to ask.. as though it’s obvious you should get charged for not being from Italy and choosing to dine at their tourist trap.
Reviews stating best pizza are probably from those who just had worse pizza and got trapped at all places.. as the pizza is indeed average (so better than below average.)
I’m born and raised in the food capital of the world. This pizza is not even close to the best.
Servers are rude and inattentive. Waited 20 minutes for dessert. And charged 3 euro for a bottle of refilled tap water.
Marinara sauce in meatball overly salty.

Read moreInitially the experience was great! The manager (I’m guessing) opened the door to welcome us in, both male servers were friendly and took and deliver our orders. It wasn’t until I asked for the check from the female server, that’s when everything went south. It’s my first time dining here, so I didn’t know you pay at the register. I got her attention and asked for the check, she rolled her eyes and came over and walked away. Then she came back to tell me to go over to the end of the restaurant where the register was. I didn’t mind, I picked up the table number placard and took it over, the cashier lady took my number and calculated the total, threw the receipt onto the tray, then she threw the credit card machine at the counter. I don’t know about you, but I thought that was extremely rude. Yes, I might not be speaking Italian, or look European in any way, but WHAT THE HELL. I’m still a paying customer and I was polite during the whole interaction. I just felt so insulted. Sorry, with service like that, your foods not that great, not coming back again.

Firstly, let’s start with the basics. The buffalo mozzarella is made fresh. It’s delicious Elastic, warm and full savored unlike the stuff that you buy at a store which has been called and shipped from place to place likely been in storage for months on end.
We did not go full ounce, opting for the buffalo mozzarella margherita. Our waitress was extremely helpful, spoke perfect English and seated us quickly. She helped us navigate the menu in no time whatsoever and pointed us towards this is the best option for margherita.
The pizza came out relatively fast, in less than 10 minutes. It was perfectly cooked. The cherry on the top, was a small bowl of the fresh mozzarella in the middle which was fantastically good. Dipping it in the tomato-based topping, even better.
The pizza dough itself was light, elastic just enough but not gummy. The edges were cooked crispy but not hard with the dough light, and delicious. There was an ample amount of both sauce and mozzarella topping all in perfect balance.
