Had little expectations coming to this eatery but I enjoyed every minute of it! This spot sells only 1 item: Stamina Hot Plate Yakiniku with Cabbage, so you know what you're getting from the get-go.
The space is intimate—much like most places in Japan—and in true Japanese fashion, ordering is made at the food ticket machine where you choose what you want and in what size. Hand the ticket to the staff and be seated.
How to enjoy your Hakata Stamina Experience: When the food is served, tilt one side of the plate onto the tiny wooden block (each seat has one) so that the lard from the pork pools at the tilted bottom. Choose from the 3 miso pastes available at the table (Curry Miso is our favourite) and add it to the lard, and mix till smooth. Dip your pork and cabbage into this sauce and enjoy with rice.
Pro tip: Add a dash of local citrus vinegar to cut through the flavour!

Well, I'm glad he did, because the stamina plate was INCREDIBLE. Changed my life, it was so delicious, especially with the spicy miso. Moreover, I'd been traveling in Fukuoka for a month at that point and eating quite indulgently so my body was grateful to finally get some vegetables, lol.
