“水炊” literally translate to cooking in water - Basically similar to a chicken soup hotpot from Chinese cuisine with one main difference that this restaurant uses special breed of Chicken which can be consumed raw.
Come here to experience something different and enjoy the service as the entire meal will be prepared by the restaurant staff, PLEASE DO NOT TOUCH the bowls or cooking utensils (like me) to avoid causing inconvenience to the staff who will be preparing your meal.
The meal started with a chicken entrée dish with smoked chicken and some raw chicken slice which can be eaten as is, personally - coming from a nation where we do not eat raw chicken, this was a new experience for me.
Then the chicken hotpot – the staff will pour a little portion of the soup in a cup with added spring onion and enough amount of salt to let the customer taste their broth in its simplest form, followed by a piece of chicken to taste.
The staff will bring a platter of fresh vegetables to start the hotpot party.
Lastly, staff will bring a bowl of rice or noodle based on your preference to create the final dish to end the meal in, they used the remainder of the broth with all the essence in the pot to put a pleasant full stop to this experience.
