Mr. Kazuo Morita, the Sushi chef of Komatsu Yasuke [小松弥助], is known as "Jiro Sukiyabashi of the EAST and Yasuke Komatsu of the WEST" (the respective representatives of the Japanese sushi scene in the Kanto and Kansai regions)and is a legend without any explanation. Mr Morita will turn 94 on March 24, 2025. Komatsu Yasuke is a famous sushi restaurant where fans from all over the country visit and well-known people from various fields gather.

Currently, it is by reservation only. It is very difficult to book; this time, as a foreigner, I was lucky to be able to reserve the table seat for the first time slot at 11am when I called this time. Open three times a day at 11:00, 13:00 and 15:00. By searching on the local website, as a nonagenarian, Mr. Morita runs most of the time the first rotation, then by his apprentices after the second rotation.

Dining at Komatsu Yasuke was probably the most exquisite dining experience I've ever had. This wasn't just food, it was art. Every piece that was carefully crafted and made was perfection.

I've lived in Ishikawa/Japan for 6 years now and nothing can compare to the sushi that I had here. It's not easy to get a reservation and you basically have to know the right people to be able to get in especially if you want a counter seat but it's so, so, so, so, worth it!

If I'm ever lucky enough to be graced with the opportunity to eat here again I wouldn't hesitate. It's unfortunate that the general wasn't working anymore when I went, however, the generals proege's are more than adequate at their craft and made for a lovely experience. Although they don't speak much English it was still a very enjoyable experience and they are very friendly.

You cannot enter the establishment anytime before your reservation as they will be cleaning up after the reservation party before you so if you get there early, you'll have to wait until exactly your reservation time. But once you enter, be prepared for a culinary experience second to none. They also if you ask ahead of time will allow you to take home specially prepared bento boxes with their sushi as well which are gorgeous and also look like works of art.

All-in-all, it was well worth the almost ¥40000 price. I don't regret it at all and want to eat here again as soon as possible. I just wish it was easier to get a reservation because I want to go back as soon as...

Spectacular, but NOT for newbies.

I can't recommend enough being familiar with local sushi to appreciate this place to the fullest. Master Chef Marita runs a tight ship, and his staff are quick and efficient in delivering the freshly made portions out to the ever-fully packed restaurant. We were asked up front if we had any allergies and we accepted the recommended sake (which I also urge you do, too).

Two of us ate and drank for 22,000 yen. For a special occasion and beautiful sushi from a master chef, this is well worth the price, and considerably...

---------------------✍ ◆住所 石川県金沢市本町2-17-21 金沢茶屋別館 1F ◆アクセス JR金沢駅より徒歩4分ほど ◆営業時間 ①11:00~②13:00~③15:00~の完全予約 ◆定休日 水曜、木曜 ◆駐車場 金沢茶屋別館の駐車場、カギはスタッフの方にお預けします ---------------------- 鮨界のレジェンドである森田大将のお店です 電話予約をして訪問しました ほとんど、握り手の方から手渡しでいただきました お土産も有名で海鮮漬けを中に入れたおにぎり「弥次喜多(3,000円)」もしくは美しい「ばらちらし(6,500円)」です 予約の段階か、当日スタッフの方にお願いします 総席数は    18席(カウンター10席、4人掛けテーブル席×1, 2人掛けテーブル席×2)で、広々としています ORDER------------ ◆お任せコース+追加(18,700円) ◆弥次喜多(3,000円) ----------------------- 【食べたもの】 ◇漬けまぐろ このわた乗せ ねっとりとしたマグロにこのわたが組み合わさり、お酒好きな方にはたまらない1品です ◇蒸アワビ 昆布出汁に蒸アワビでしょうか 蒸アワビは驚くほど柔らかく、お出汁も美味しいです ◇赤イカ 柔らかく空気を含んだイカがふんわりと口の中で解けます シンプルにお塩が美味しかったです ◇マグロの炙りトロ 脂たっぷりトロです ◇甘エビ ◇水ナス ◇白甘鯛 軽く炙ってあります とても美味しかったです 身が甘く弾力もしっかりあります、炙ることで甘めの醤油が香ばしくなりお代わりが欲しくなりました ◇白山(器のお寿司) ◇煮ハマグリ とても美味しかったです! ハマグリはとても大きく弾力があります、ツメは味わいが深く濃くとても好みでした ◇穴子 柚子と塩 おすすめということで追加しました ◇うなきゅう巻き 美味しかったです! 香ばしくカリカリめに焼かれた熱々のウナギがたっぷり、パリっとあぶった海苔とさっぱりキュウリがより食感を良くしており、ごまもいいアクセントです 2本目が欲しくなる巻きでした、何本でも行けそうでした ◇ネギトロ巻き SNSでよく見かける光景です ネギは大量に使われていますが、香りや味わいが上品で食感も固くありません 自分でお醤油を付けるスタイルです、美味しかったです ◇弥次喜多(1人前が2個です) 作って3時間たった頃が、シャリ、海苔、具材の味が馴染んで合うとのことです その日の夜と翌日に食べました、翌日朝の方がより味が馴染んでいる気がして個人的にはベストでした シャリは鮨の握り同様、ふんわりしたお酢の酸味と香り、お米は柔らかめです 海苔は水分を吸っています 中の具材は数種類の具材(きゅうり、飛子のようなもの、マグロ、白身魚)を漬けにしたものを海苔で包んでいて、海苔は漬けの汁を吸い佃煮状になるのがこれまた美味しいです 2個おにぎりはありますが、1つはウニが入っていたりとそれぞれで中身が若干異なるのも食べていて楽しかったです 【感想】 シャリはふんわりと握っており、ネタは大きく分厚いです ネタを大きくカットしてから、包丁をネタに大きく差し込む筋切を複数回行っていました、初めて見るくらいのしっかりした筋切です そのおかげか、どんなネタも口の中でふんわりと柔らかくなっていました 森田大将がいらっしゃらなかったのは残念ですが、カウンター内の握り手4名の方がフル稼働していらっしゃいました また常に気にかけて下さったりと明るい接客でとても居心地がとても良かったです 常連の方も多くいらっしゃる印象で、多くの方はお会計の際に次の予約も取っていらっしゃいました 「西の弥助、東の次郎」とうたわれる名店、気になっていたのでお伺いできてよかったです 次はレジェンドの握りもいただいてみたいです
