Mr. Kazuo Morita, the Sushi chef of Komatsu Yasuke [小松弥助], is known as "Jiro Sukiyabashi of the EAST and Yasuke Komatsu of the WEST" (the respective representatives of the Japanese sushi scene in the Kanto and Kansai regions)and is a legend without any explanation. Mr Morita will turn 94 on March 24, 2025. Komatsu Yasuke is a famous sushi restaurant where fans from all over the country visit and well-known people from various fields gather.
Currently, it is by reservation only. It is very difficult to book; this time, as a foreigner, I was lucky to be able to reserve the table seat for the first time slot at 11am when I called this time. Open three times a day at 11:00, 13:00 and 15:00. By searching on the local website, as a nonagenarian, Mr. Morita runs most of the time the first rotation, then by his apprentices after the second rotation.

I've lived in Ishikawa/Japan for 6 years now and nothing can compare to the sushi that I had here. It's not easy to get a reservation and you basically have to know the right people to be able to get in especially if you want a counter seat but it's so, so, so, so, worth it!
If I'm ever lucky enough to be graced with the opportunity to eat here again I wouldn't hesitate. It's unfortunate that the general wasn't working anymore when I went, however, the generals proege's are more than adequate at their craft and made for a lovely experience. Although they don't speak much English it was still a very enjoyable experience and they are very friendly.
You cannot enter the establishment anytime before your reservation as they will be cleaning up after the reservation party before you so if you get there early, you'll have to wait until exactly your reservation time. But once you enter, be prepared for a culinary experience second to none. They also if you ask ahead of time will allow you to take home specially prepared bento boxes with their sushi as well which are gorgeous and also look like works of art.
All-in-all, it was well worth the almost ¥40000 price. I don't regret it at all and want to eat here again as soon as possible. I just wish it was easier to get a reservation because I want to go back as soon as...

I can't recommend enough being familiar with local sushi to appreciate this place to the fullest. Master Chef Marita runs a tight ship, and his staff are quick and efficient in delivering the freshly made portions out to the ever-fully packed restaurant. We were asked up front if we had any allergies and we accepted the recommended sake (which I also urge you do, too).
