It's crunch time whenever I'm departing a city. The overriding question is always what to eat. Knowing you might not be back for a while intensifies the decision-making process.
I resolved this time that my parting meal would be a Tonkotsu ramen in a place I've never tried before. I found the place after much ado and made my way there.
Everything was going according to plan until I got there. I'm a visual person and pictures hold an inordinate sway over my decisions. On this occasion, it was a picture of the mazesoba.
Ordering was as usual via the now familiar ordering machine. The process was facilitated by the provision of a numbered chart next to the machine indicating what each button represented. This is critical given it's location within Denden Town which attracts customers spanning the globe.
With only counter seating for maybe 8 or 9 pax, this restaurant was properly right sized as a one man show. From the time you hand the meal ticket to the time you receive your bowl of noodles, I'd say it wouldn't exceed more than 6-7 minutes even if the place was full.
The composition of the mazesoba included peanuts and chopped onions, something you don't see too often. Don't forget to add some deep fried shallots for crunch and taste. I'd caution against being too brave with the Chili powder as it's potent enough to disrupt the taste of the dish.
