Overpriced specialty coffee shop where exclusivity of lots and presentation is prioritized over having an interesting palette of coffee beans.
I have been giving them a shot in-store twice now and bought 3 bags so far (waiting the advertised 2+ months degassing time out), just to be presented with perfectly average light-roast coffee experiences.
If you want: expensive, exclusive beans do mental gymnastics of reducing cognitive dissonance of paying so much and waiting so long for your beans to degass by telling yourself that the coffee tastes better than it does your coffee to be brewed in the pretentious Paragon Dripper to justify the high price
then this is the coffee shop for you
If you want the same coffee taste experience for better value then go to one of the many other amazing specialty coffee shops in Japan. You might even find something a lot cheaper, less pretentious and more interesting tasting (without needing infusion or fancy fermentation even).
Definitely not on my recommend list for specialty coffee shops.

The EL triangulo was made by the female Japanese barista and was exquisite. All the citrus notes of the bean were apparent and delightful to drink. Perhaps one of the top 5 pour overs I have ever had.
The pie San exclusive was only alright, in retrospect it may have been because of the male barristas technique. He was from AU and didn’t seem too knowledgeable about the equipment when my friend asked about it, nor was he aware of the resting times of the beans we bought. He also charged us the higher price, though he was nice enough to split the drinks into multiple cups for us to try
