I feared the Stage 2 and up, so I just stuck with the Stage 1 Black at 900¥. The Black adds house-made "Maayu," which is burnt sesame and garlic oil. This added a different dimension to typical Tantanmen. And what tantanmen it was. You can tell they gave it flavor depth, with a hint of creaminess and savory, salty tastes. While it wasn't the most amazing tantanmen I've had, as unfortunately it was generally overpowered with the spice from the red chili, it was certainly still quite flavorful.
Once you finish your noodles, you can opt for the Aburi Cheese Risotto option for 250¥, which turns your soup remainder, along with rice and cheese toppings, all toasted with a torch. This is a fantastic way to polish off your meal.
