Ginza Onodera is a world-renowned high-end sushi brand, with its flagship store in Ginza and international acclaim—including two Michelin stars for its Los Angeles location in 2022. Its reputation for top-tier sushi is well-established, but this time, I visited Ginza Onodera Tōryūmon, a branch known for its exceptional cost performance.
Tōryūmon is designed as a training ground for young sushi chefs, meaning the sushi is prepared by apprentices still honing their craft. Because of this, the prices are significantly more affordable compared to the main location, where dinner courses start at ¥25,000 and up.
Entry requires a numbered ticket, distributed via a ticket machine at 3:00 PM, with service starting at 4:00 PM. There’s no reservations, and since it’s a standing sushi bar, seating is limited to the counter. Ordering is done via a web app by scanning a QR code with your smartphone—a smooth and modern system.
Despite being a training-focused branch, they use the same high-quality fish as the flagship store, and the taste was absolutely on point. Considering the price, it felt like an incredible deal!
