One of the busiest purveyors at Tsukiji Market with a continuous queue. The lines for ordering and pick up could be more clearly marked but the staff taking orders are very friendly, efficient, and helpful with excellent English.

The never frozen A5 Wagyu is the star here and though they sell uni on top for an upsell, the simple salt and pepper route is the way to go.

The chef cooks it expertly and the thick cubes of A5 Wagyu center loin are high quality with little to no sinew. Much better than other vendors I’ve had in Kyoto and Osaka. Each order takes about 10-15 minutes so prepare for a wait but they’ll cook to a perfect medium rare. I’m going to have to up my own home A5 Wagyu game and duplicate the thick cut which may be superior to the thinly sliced route I usually do.
