We visited Verlan last weekend, and I was pleasantly surprised by the attentive service from the start. Our request for a low table instead of a high one was accommodated without hesitation, and we were seated at a cozy spot in the back. The dimmed lighting and candlelit atmosphere created an intimate and refined setting, making the experience feel special. While the interior differs from Café Panache, it had its own charm and elegance.
The service was outstanding—polite, friendly, and genuinely attentive. The staff always had a smile and made sure we felt well taken care of, which is something every guest appreciates.
Now, onto the food. The meal began with warm sourdough bread served with a rich and tangy lemon butter—simple but incredibly delicious.
For my starter, I had the steak tartare, which was presented in a unique way. It was topped with bottarga, a cured fish roe that added a subtle umami depth, along with a luscious egg yolk and crispy Pommes Anna, creating an interesting contrast of textures. While the dish was beautifully prepared, I found it slightly too salty for my taste.
For the main course, we shared the Côte de Boeuf , and it was cooked to absolute perfection. The quality of the meat was evident, and it was prepared with care, allowing the flavors to shine.
To finish, I opted for the classic crème caramel, which was smooth, creamy, and the perfect sweet ending to the meal.

This was a good piece of meat, but not a steak). Service by the young crew was extremely good. Very good. But… We were seated next to a business table of 16 people: the sound proofing of the restaurant is already not great but with this table next to us it was very painful to enjoy our own conversation. At some point the other guests were standing and talking even disturbing service. I had to point out the nuisance to our waiter who told us “the manager” was going to interfere. We never saw “the manager” and not a word of apologies for this not-so-great-food AND very-noisy experience. This added to a bill of €480 for 4 persons (aperitif + 2 bottles of wine incl.) Final comment on the wine list: it looked good but many were stricken (out of stock). Out of the ones not stricken, the first 2 we ordered were… “out of stock”! We were explained the restaurant was renewing their wine list, and that is ok, but please update your wine menus accordingly (I had 2 different wine menus during the dinner, not the same wines were stricken on them!!!) Service was pretty good and staff were very friendly. For starters we went for the hamachi (excellent) and the white asparagus since they are in season (excellent). For mains we went for 650g of the cote de boeuf which is topped with chives and shallots and cooked medium rare. It was good, although the meat was a very tough and chewy but it was flavourful. For sides we had their fries with their house mayo (phenomenal) and a spinach salad with green beans and miso dressing (excellent). For dessert, we went for their Mille feuille with pistachio filling (it was okay). They have a very strong cocktail menu and extensive wine offering.
