Im gonna be neat picking here..overall it was a nice experience and me and my girlfriend enjoyed the food. We both had pizza mortadella and Im just gonna say the things we thought could be improved. The mortadella was cold. And it probably cooled down the whole pizza too. Have a small portion of it ready, outside of the fridge at all times wouldn't make any extra hustle for the kitchen and would fix the problem that I thought was, honestly, a bit of a "beginner mistake". The other thing was that the pistacios that were sprinkled on top didnt provide enough pistaccio flavour for us to indentify it as one of the main components of the dish. A bit of a pistaccio cream would go a long way. I understand that can be expensive but pizzas also are soo..or maybe just roast the pistaccios, would help too (Im not 100% sure if they were or weren't) I'd like for the Bottom/ base of the dough to be a bit more crunchier. Totally a personal thing. Some parts of the menu were a bit wierdly written like pasta thats described as "cauliflower, purple cauliflower"..firstly, whats a purple cauliflower? Second, is it a cream, roasted, theres probably cheese in the sauce? The waitress didnt know herself and went to check for us and came back with little extra information.. I ordered Carbonara without the meat, everything was fine the first 10 minutes until another woman came to me and told be she didn't unterstand my order. I told her I ordered the pasta Carbonara without the meat - only the sauce made of eggs and whatever. She told me that's not possible in Italian kitchen, it's a traditional dish. I asked if the pasta is pre cooked and she told me no. I accepted the situation and told her I'm not that hungry anyways and I don't want anything else. She stood next to me a long moment, told me to order something different again and again even though I told multiple times I don't want anything. She even asked me rude if I've ever been to Italy. I never felt this uncomfortable in my life at a restaurant!
Bad customer service, unfriendly, rude.
I just like the taste of Carbonara and I'm not allowed to have meat for health reasons. I'm sure I'm not the only one. Even in Italy. And to answer your rude question if I ever been to Italy - I've been to MANY places, many countries and continent's and never been treated this bad anywhere.
Compassion should have a bigger meaning than any tradition.
I went to bed hungry and had a horrible first day of my 2 day trip to Amsterdam. Your actions and behavior affect people but I hope your actions made you feel better yesterday.

I had medium expectations going into this restaurant as I had been some high end places already and found the food to be lacking in quality and flavour. However, Sebastian was a welcome bucking of the trend.
The pizza and foccacia were gorgeous, rich depth of flavour, crispy yet fluffy and chewy. The red sauce was filled with the pure taste of high quality tomatoes.
The pasta's were incredible. They took me back to italy. The carbonara was rich and decadent, with beautiful well rendered guanciale. The ragu was surprising, as I had misread the menu and assumed it was bolognese, yet it did not disappoint. It was flavorful and delicious.
The service was mixed. One of the young waiters was unattentive and overall did not seem interested in being there. The other older gentleman was very attentive, warm and pleasant.
The ti ra mi su (deconstructed) was a miss. It felt out of place in a restaurant that is no fuss, well executed classics. Flavour wise, it was passable.
Overall Sebastian was a very enjoyable dining experience. I highly recommend for anyone looking for a restaurant that is uninterested in instagram trends (which is what the rest of the city seems to cater for) and interested purely in delicious, classic...
