I dined at the restaurant Sinne on an ordinary Thursday in June 2019. This was my first visit at this restaurant. Service: I found the service very good: Very polite and obliging. The atmosphere was remarkably relaxed, there was a good mood in the team. The service intensity was relatively high.
Food: The menu was put up very carefully. All dishes were very thoroughly composed. The level of the dishes was consistently very high - there were absolutely no shortcomings. The tension and/or depth of the flavors were always at least very good and - in most cases - even better. The performance was often quite impressive.
Wine: I found the wine pairing very good to outstanding: They served wines from different regions across Europe. The wines were remarkably diverse in type and character. All wines tasted very good and they always matched well to the dishes. I would describe the style overall as modern and diverse.
Presentation: I would rate the presentation of the dishes and components as good to very good overall: The colors were in most cases appealing and, in some cases, even very good. One dish included a simple color-effect. Some elements came in sculptural form. The decorations were - apart from one or two exceptions - mostly restrained. Once or twice a simple effect was achieved with positioning. The textures were always appealing to very good and in some cases (especially the amuses and the second dessert) quite outstanding. Special- or fake-effects or the like were not presented; the same goes for surprises. The bread was simple, the amuses and the confiserie were a bit reduced. I liked the proceedings at and around the table. In several cases components were added to dishes at the table. The team often introduced the dishes with nice attunements to and/or explanations of the aromatic structures. The timing was very good, the same applies to the sizes of the dishes. I found the presentation of the wines very good.
Premises: The restaurant can be reached very good by public transport. I found the design of the room adequate; the style reminded me a bit of a pub (in a good sense). Many places allow a view into the kitchen. The tables are spaced relatively close to each other. During my visit the restaurant's utilization was very high, the audience was obviously very diversely composed. As conversations were in full swing everywhere, I found the volume of background noise quite high.
Price: In my opinion the restaurant offered an outstanding price-performance ratio. I appreciated this very much.
To sum up, I would say that the restaurant's overall performance was very good and very convincing. Restaurant Sinne left a lasting impression. When I happen to visit Amsterdam again, I shall certainly consider another visit to...

The owner chef of SINNE is Swedish Greek. The pride and the personal touch shows in every aspect of your meal. SINNE means Senses in Swedish, and it’s definitely an experience for all the gastronomy senses. Delicious food, plated in earthy and charming crockery, with our attentive hostess bringing new cutlery with every Course. I really should have taken a photo of the menu, to explain it all better, however the menu changes with the seasons, with a new one expected in a couple of weeks.
Our hostess was the lovely, and attentive Anna Leos (pronounced Anna Loosh) who described every detail of every dish of our Six Course meal. So there was all the finesse of gastronomy to look forward to, and we relished discovering every ingredient pop with taste on our tongues. The bartender was also very attentive, cheerful and cordial. Between him and Anna Leos, we felt very welcome guests. The photos do not do justice.
On arrival we got a complementary Amuse Bouche, actually two different presentations, which really set the bar high for what was to come. Every course promised to be my favorite, till the next one came..and our appetites and tummies were both in food heaven. Finally, it was time for our dessert. What came was another Amuse Bouche, so by the end of our meal we had enjoyed 9 Courses! Of course, the dessert was just as spectacular as the rest of our menu choices. Between us we tasted everything on the menu, and every dish was par excellence!
For me personally, it was an experience to cherish, and I would easily pay more for the food we ate, the service and the easy and relaxed ambiance of SINNE. Other members of the family enjoyed their wine, having ordered the same bottle as on their last visit here. For me there was a fabulous non alcoholic Rhubarb drink, which paired perfectly with my dessert.

Read moreLast night was the second time we did not eat at Sinne due to a sudden cancellation by the restaurant.
The first time we were informed by e-mail that our reservation, although made months in advance, was cancelled due to Corona circumstances (the restaurant did stay open but we were unlucky to be selected as an overbooking).
Last night on arrival at the restaurant we were accused of not responding to the reconfirmation of the reservation. Their e-mail had ended up in our spam folder (e-mail providers such as Apple and Google often recognise messages sent by marketing automation systems as spam), but we would also have been called by them that afternoon. On a 0033 number. We placed the reservation during our holiday in France and gave a Dutch 06 number without country number. Apparently, the reservation system placed a French country code itself. It did not occur to the manager to try the number without a country code, considering we have a typical Dutch name.
We have been looking forward to this dinner for a long time, babysitting was arranged and we had something to celebrate, but upon arrival their tone was immediately strikingly negative. The reservation was cancelled by them in the afternoon and despite explanations about all the above there was no table available anymore. We thought it was a Michelin undignified situation.
We were completely surprised that there was no solution and that a restaurant did not take into account the chance that we would come anyway. Keeping a table free and thus maintaining flexibility in case we do show up is the least we would expect in such a situation, even if only until the expected time of arrival. They did not ask for our correct contact details so that they could come back on this later. We were convinced we haven’t done anything wrong. We redeemed our gift card immediately and were required to leave.
Fortunately, we were then warmly welcomed in a, also fully booked, renowned restaurant where a table was set up for us. Still had a nice evening, but...
