My husband and I went to Testamatta to celebrate my birthday, and it was one of those places where you walk in and feel instantly at home. For an upscale casual spot, the vibe is super relaxed and friendly; it wasn’t pretentious at all, but the food was just the best part. Truly well done. You can tell they put a lot of love and skill into every dish.
Chef Roberto takes classic Italian dishes and elevates them without overdoing it. We opted for the four-course Chef Recommendation menu to be surprised, and honestly, each course was a highlight in its own right. The scallop was incredibly fresh, and the meat was cooked to perfection. The seasonal vegetables added a nice touch of crunch and lightness (who knew leek and lettuce could taste like that!). The flavors were so well balanced. When you combine all the elements on your plate and eat them together, you'll realize that each ingredient, along with how it's cooked and seasoned, was made to complement one another.
The plating was beautiful, but not fussy. The portions are just right—enough to satisfy and fill us, but not too heavy. This is the restaurant where you want to take your time, savor your wine (Francesco, the co-owner and sommelier, paired the perfect wine for every course—we felt like we were in good hands), chat, and relax with your dining companion! You won’t feel rushed at all!
It's one of those special spots in Amsterdam that makes you want to come back, simply because of the great food, great vibe, and how genuinely kind and attentive everyone is. Thanks so much for the fantastic experience!

We started with a glass of Franciacorta, come antipasto a salad of green asparagus, fried leaves of cime di rape, almond milk, and almonds. An unexpected, elegant, and hard to describe dish. The spaghetti fatto a casa, aglio, olio, peperoncini with a tartare of langoustine was spot on. Such a good dish! Corvina with a raw fennel blood orange salad and young artichokes. An oven roasted melanzane with scamorza affumicata, a fonduta of a Sardininan cheese and herbs....what a fantastic dish. The Etna Rossa was a great pairing.
